Pomegranate Molasses Coffee Cake.

I never used to like coffee cake.
Me, the queen of all things crumbly and streusely, did not like coffee cake.
Obviously, that probably came from my longtime dislike of coffee which changed earlier this year when I began, um… drinking it.
You guys know. I always wanted to drink it so I could be cool, and now I want to not drink it because it makes me feel like a maniac. I kind of feel like I’m on some sort of drug when I drink it. Almost buzzed like I’m drunk. As in, I’ve actually agreed to do certain things (work things, life things) after a cup of coffee that I normally would not agree to in my pre-coffee days. It makes me all happy and all oh I love everyone! and of course I’ll do this chore/annoying project/favor for you because I just drank coffee and feel like I’m a superhero!
No really. This is me every single day. Maybe it’s because I’m still new to the whole coffee thing? I don’t consume much caffeine in any other form. Besides copious amounts of chocolate, that is.
The good news is that I’m finally the girl that can be hipster enough to go to a coffee shop and actually get some version of coffee that resembles real coffee and not just sugar and syrup and whipped cream in a cup.
The bad news is that I’m finally the girl who feels incomplete without that caffeine.
The best news is that my coffee cake is no longer lonely.
And even though coffee makes me feel cracked out, I will gladly drink a cup with some cake.
The things we do for love.
See, last year I made these whole wheat coffee cake muffins and subsequently talked about how I didn’t really like the cake itself. Almost a year to the day. Things have sort of changed, but not much. Now I love coffee cake in muffin form, but the thing is that I can never (I mean never, ever, ever Taylor Swift style) pass up a quick bread.
Quick breads are desserts that basically masquerade as snacks. It’s the best thing ever because you can eat cake for breakfast but you’re really just eating “bread.” You’re really just eating a SNACK. You’re not eating cake at all.
Nope. Checked again. Not cake. Just bread. Just a nice healthy snack.
This cute little cake bread has some pomegranate molasses swirled inside the batter and if you haven’t tried pom molasses, oh oh oh you must. It’s completely different from regular molasses and if you’re a pom freak like me, you’ll just die. It’s a syrupy concoction of sugary pomegranate flavor that has a hint of tartness and is just, well… perfect. It only adds a touch of flavor to this cake, but it’s enough to go… what the heck is in this? You can also totally leave it out if you’d prefer, but since it’s fall and I’ve eaten my weight in pomegranates and slathered more pomegranate body butter on my legs than humanely possible and sprayed pomegranate perfume on my face, I’m living this up.
Ah and we also have the craziest amount of crumbly, crunchy cinnamon streusel here.
Would you expect anything less? Course not.
Pomegranate Molasses Coffee Cake
Ingredients
- 2 cups all-purpose flour
- 3/4 cups granulated sugar
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs, lightly beaten
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 3 tablespoons pomegranate molasses
- 2 teaspoons vanilla extract
- 4 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350 degrees F. Line a 9×5-inch loaf pan with parchment paper and spray it with nonstick spray.
- In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In a small bowl, whisk together the eggs, buttermilk, oil, molasses and vanilla extract. Mix the wet ingredients into the dry, stirring just until combined. Stir in the melted butter, stirring until combined.
- To make the crumble, mix together the sugar, flour, cinnamon and salt in a large bowl. Using your fingers, a fork or pastry blender, mix in the butter until it is evenly dispersed. I use my fingers and take almost a full 5 minutes to mix it in.
- Pour half of the batter into the loaf pan. Add half of the crumble on top, then pour the remaining batter on top. Cover the top with the remaining crumble. bake for 55 to 60 minutes until the top is golden and set. Remove the oven and let cool in the pan for 30 minutes. Remove the loaf by lifting the parchment paper out and let it cool for another hour before cutting.

Anything molasses is such a wonderful addition to wholemeal type breads. I find pomegranate molasses is sourish but wonderful when you have very sweet toppings such as the crumble on this bread. Pomegranate molasses also make s wonderful acid in salad dressing? have you tried it before?

Love this post – coffee does that same thing to me. Makes me feel invinsible. My mom gave me a bottle of pom molasses over a year ago, and the only thing I could think to use it in is salad dressings. This is a great idea! Also, really loving these photos. They make me feel cozy!
Wow! I’m a long, LONG time coffee drinker (as in, I’ve been asking for it since I was five), but it doesn’t make me feel nearly as awesome as you! Just a little bit more awake :) Maybe I should quit and start drinking it again in 6 months time? and things would change…

Mmm I love the flavour that molasses creates in baked goods, and these photos are gorgeous! Like you, I am not naturally a coffee lover and enjoy the smell far more than the taste. On a side note, David’s Tea just introduced their winter collection, which includes coffee cake tea and I plan to get some this weekend!
Still not a coffee drinker. I actually tried to drink it a week or so ago and got through maybe a half cup, but the whole time I really just wanted to spit it out. So bad. I do like to mix a 1/4 cup or so into chocolate drinks, but for some reason I can handle coffee with chocolate! Also, I am all for coffee cake. Yeah, I know, weird. Whatever, this cake looks awesome and I just made some homemade pomegranate molasses!

Welcome to the coffee side of life! It’s ironic b/c after a 20 year hardcore habit I’ve been drinking less and less – to the point I can go days without it. Crazy, eh! After I did my first juice cleanse and I went thru massive caff withdrawals, I realized I needed to tone it down a little..LOL But yes to the agreeing to do things you never would after a cup b/c you have all this energy!

I never attributed my hyperactivity to my coffee drinking, but I believe you just made that connection for me. Here I was thinking that I was just going to get a delicious coffee cake recipe out of reading this post, but no…bam. Mind blown.

Jessica, what I really want to know is HOW you made yourself like coffee – because I am exactly the same!!! It makes me feel high or buzzed or something weird and more often than not makes me nauseous later on. I desperately WANT to be a cool coffee drinker… but it seems coffee doesn’t like ME. haha! we’ll i’ve always liked the crazy frappuccino drinks and i think i ever so slowly stopped adding things like that. i still add cream and sugar but nothing like i had to before. honestly i think i liked the feeling better than the taste… :)

I “say” I’m a coffee drinker, but really I’m a half cup of coffee + half cup of cream drinker, which really doesn’t help me all that much, haha. I’m all about some coffee cake, though! Oh, GEE, should i admit my dirty subconscious in the public? Because I totally read that as porn molasses. WHOOPS. Anyway POM molasses sounds awesome and so does this cake. I’ll keep my eye out for it, though I’m afraid I’ll end up with a whole bottle of pom molasses.

I love coffee cake – the cinnamon crumble on the top is always the best part in my opinion. But I went the other way – used to drink coffee all the time, now I just stick to tea.
Love this. And I totally related to your feelings on coffee – I never, ever drank it until recently. I just started to feel like I needed to as a member of the Grown Up Club. But it really makes me feel wired and that’s frankly sort of uncomfortable, to be going through daily life buzzing like a crazy person. My solution has been to experiment with different brews, like maybe some are more caffeinated than others? I don’t know. As you can tell, I’ve already had a cup or two this morning. #FAIL
for this reason, i’ve actually started drinking decaf!

I love coffee so much. I cannot get through the morning without some, and my husband has been known to ask if I had coffee on a weekend when I’m being particularly ornery.
That being said – I adore coffee cakes. They’re so… yummy. The crumb is quite possibly my favorite part.

This looks amazing! Pomegranate molasses is divine. Last winter I made a pomegranate molasses yellow cake and topped it with Nutella buttercream. It was bizarre and it was delicious.

And I’m the worst when I don’t have it. insert mad face, sunglasses down, stereotypical mean-girl behavior…then tears streaming and total breakdown if taken to extreme lengths… just give it to me and we’ll all be ok.

I now realize I must try pomegranate molasses. I just devoured a pomegranate tonight! I love a good crumb cake and I used to drink coffee all the time. In grade school, nothing came between me and my flavored coffee drinks! But now I don’t touch the stuff. Go figure!
