Salted Watermelon Margarita Popsicles.
I’ve got all your dreams sitting here in this little cup.
Seriously! Look!
Salty rimmed, lime juice kissed, crushed ice rafts of watermelon dreams.
It’s pretty much the best day ever.
Oh my Friday. I wish everyday of my life could look exactly like this.
Would you cover a sweet little popsicle in a sprinkle of flaky pink himalayan sea salt?
I don’t see why not.
I’ve always said that margaritas are my favoritest cocktail of all the cocktails. And if I have to choose a flavor other than traditional lime + tequila, I often go with strawberry. Like for years! I went with strawberry. Basic basic basic B.
But then. I made watermelon mint margaritas for Seriously Delish. They have now been my fave fave fave margarita flavor now for three years running. SO refreshing and wonderful. Basic basic B. Minus one basic. Getting better.
Truth: I love making them at home because often, watermelon drinks ordered out are full of the syrupy melon liquer. It kind of tastes fake? Like watermelon candy or something? Do you know what I mean? Do you feel the watermelon pain?
So. I get a bunch of watermelon juice and make my own watermelon simple syrup which is so, so, so delicious. You can use it in any cocktails (especially mojitos!) or drink it on ice but also… use it in popsicles. Like we are doing here.

I expected these popsicles to taste pretty good given my love for the cocktail, but I was not expecting to love them as much as I did. Like straight up, could-not-stop-eating love. At the moment, I can’t think of one other thing that would be more satisfying and thirst-quenching on a hot summer day.
[Err, besides a michelada which I am totally dying to make this instant. To the point where I am obsessed. Even though I hate bloody marys. Should I do it? Huh huh huh? Why must I get something like this in my head?]
I couldn’t just let them MELT and go to waste. Duh. Must consume all.
Oh! Also included is an adorable little lime slice in the pops for decoration – but it ended up adding a bit more flavor and if you’re down, you can always consume the slice. Especially if it’s thin! I wouldn’t play tooooo much with the tequila amounts or else the pops won’t fully freeze. And the Grand Marnier is a given in my margaritas – I like just a little hint of orangey citrus. You can def leave it out or use triple sec or something of the like.
The combo makes for ideal summer on a stick. Sip (or, um, slurp? (<worst word ever)) it.
You know how we celebrated popsicle week? I went a bit overboard and wanted to share popsicles every single day that week. Eddie told me I was nuts. Thought I had lost my marbles. That it would get too boring. But I get obsessive, no?
I waited three weeks and in true millennial brat form, I could NOT wait any longer.
You need these icey dreams in your life.
And you obviously should serve them with actual margaritas. Of course! I mean, how else would you do it? Double drinks in the best way possible. One thing to do this weekend? THESE. Please.
Salted Watermelon Margarita Popsicles
Ingredients
- 2 cups fresh watermelon juice
- 1 cup sugar
- 1/2 cup fresh lime juice
- 1/3 cup silver tequila
- 2 tablespoons Grand Marnier
- 10 lime slices
- pink himalayan sea salt
Instructions
- To make the fresh watermelon juice, puree 3 to 4 cups of watermelon chunks in a blender or food processor. Pour through a fine mesh sieve and press with a spoon to release all the juice.
- Combine the sugar and 1 cup of watermelon juice in a saucepan over medium heat. Bring to a simmer, whisking so the sugar dissolves. Simmer for 1 to 2 minutes, then turn off the heat. Stir in the remaining watermelon juice, lime juice, tequila and grand marnier.
- Fill each popsicle mold with a lime slice. Pour the watermelon mixture over top. Freeze according to your popsicle maker’s directions, for at least 4 to 6 hours. Serve with a sprinkle of sea salt.

Margaritas are always my cocktail of choice! And less than 3 months until I can enjoy them again! And since I have been craving watermelon like no other during this pregnancy I think these popsicles might be the end of me…just because margaritas without tequila won’t do me any good! But definitely saving for post baby!

True story – the battery in my watch died, so I set it to 5:00 and have been wearing it anyway for the sole purpose of having an excuse to cocktail. THESE LOOK AMAZING. I’m making them this weekend and eating the whole batch myself. BOOM.

Um… I support a week of Popsicle recipes. Wholeheartedly… maybe something with American spoon jam in it (we also bought a box today at sidewalk sales. Did you see they were only $5!!!) Strawberry balsamic would be good too. Watermelon balsamic??? I don’t know, I want to eat all the Popsicles.

Great Boozy Minds think alike! I’m just working on a Watermelon something…maybe margarita, maybe mojito but for sure with watermelon and booze and now I want THESE! So cute and icy cold; perfect summer libation no matter the form!
I tried making watermelon sherbet this past week and learned an important lesson though. Great drinks and Popsicles and sherbet need a really great watermelon. Now should be the time but it wasn’t for me. Luckily the neighbor kids aren’t too fussy; they’re like Mikey, they’ll eat anything sweet! :)
um. so funny story – last time I tried to use my pink Himalayan salt grinder… I literally BROKE it open and poured salt EVERYWHERE… I still haven’t fixed it… and this might be the PERFECT reason (read: excuse) to get in there and get that thing cracking again (pun intended).
Oh my gosh this sounds amazing and perfect for summer! Sadly I am allergic to watermelon though so I will never know how good this tastes. I will just have to imagine. But on a side note your pictures our amazing! So bright and crisp!
