GUYS. I am struggling right now with all the Christmas feels. For some reason it has hit me early this year (the magic! I love it! maybe because of Max?) and I can’t do anything about it because I’m hosting Thanksgiving! I mean, I guess I could, but I want the house to still feel harvest-y over twinkling lights and snowy.
So! I’m pushing through with one more delicious fall cocktail before the big meal next week. Pear obsession continues…
I wanted a drink with a little warmth and spice. But also some traditional margarita tastes. You know? I did a little lime and a little orange, some gold tequila and my favorite grand marnier because I just can’t make a margarita without it.
A honey syrup came first, swirled with some vanilla bean paste and poured over crushed ice. Mixed up with the rest of the ingredients, it’s a cinnamon dream! I used a pear nectar but you could use a pear cider or even pureed ripe pear that you blend yourself. The coarse, raw sugar on the rim is perfection, so I highly suggest purchasing some of that. So crunchy!
Oooh oooh oooh let’s talk Thanksgiving cocktails while we’re at it! What are you making? I’m heavily leaning towards my very old school but delicious apple cider sangria. I also really love apple cider margaritas though, so how do I choose?
Last week we shot a video for this cranberry chai sangria and it is so.freaking.good too. As is the pomegranate orange champagne punch! And cider beer sangria! UGH.
Perhaps everyone (yes you!) should just come here so we can make four pitchers of sangria and punch and go to town. YESSSS.
Honey Vanilla Pear Margaritas
Ingredients
- coarse sugar + cinnamon for the rim
- crushed ice for serving
- 2 ounces gold tequila
- 2 ounces pear nectar or juice
- 1 1/2 ounces Grand Marnier
- 1 ounce honey vanilla syrup
- 1/2 ounce fresh lime juice
- 1/2 ounce fresh orange juice
- sliced pears
honey vanilla syrup
- 1/3 cup honey
- 1/4 cup water
- 1 teaspoon vanilla bean paste
Instructions
- Place the sugar and cinnamon on a plate. Rim a glass with a lime or orange wedge and dip in the cinnamon sugar to coat. Fill the glass with crushed ice.
- In a cocktail shaker with ice, add the tequila, grand marnier, pear nector/juice, orange juice, lime juice and syrup. Shake for 30 seconds. Pour mixture into the glass. Add a few sliced pears and stir. Drink up!
honey vanilla syrup
- Heat the water and honey in a saucepan over medium heat while whisking. Bring it to a simmer, then cook for 2 minutes and turn off the heat. Stir in the vanilla bean paste and let the syrup come to room temperature.

And I don’t have kids yet but I can totally see how you want to get into the Christmas spirit with Max being at an age when he already understands so much, which makes holidays so much fun. (Not that they weren’t when he was a baby, but I think you know what I mean?)

Yes, I think I’ll take this as my fruit serving for the day! I’m making wassail (mulled cider) and apple cider mimosas for Thanksgiving, but these have tequila…so I’m going to need them too!

Ok, I actually have *almost* every single thing on hand to make these. Pear juice? Yup, using it in a pie. Grand Marnier? Just bought some for cranberry sauce. Lime? Still kicking around from enchiladas. But vanilla bean paste? It’s so spendy!! Can I sub in normal vanilla like the peasant I am? How much would I use? Either way, I am SO making this for Thanksgiving dinner instead of popping for a cheap bottle of wine. Way excited. Thank you for the recipe!

I’m thinking of making these but with your vanilla ginger syrup instead of the honey vanilla. Thoughts? Will the spices be too overpowering if I use pear cider too? Thanks!!

I’m always experimenting with new margarita recipes to try for my fiancee and I! The idea of honey and vanilla together in a margarita sounds like a real good way to mask the tequila. She likes cocktails, but the less flavor of alcohol the better for her. So this one may be perfect to try!

Have you tried this with bourbon instead of tequila? I love this flavor combo but wanting bourbon. I was thinking of leave out the lime and orange and add a touch of ginger beer? Do you have a recommendation?

Other than using triple sec instead of Grand Marnier, and vanilla extract instead of vanilla bean paste, I stuck to the recipe. It was a hit!
Where the heck do you get vanilla bean paste?
i usually get it at williams sonoma, but i also occasionally find it at home goods or tjmaxx! just found it there last week!
Hi. I’ve never made any cocktails before and am going to try this one on Thanksgiving. Is the crushed ice for serving but in the shaker you use regular ice cubes? Also, is the honey vanilla syrup something I can make in advance? I was hoping to use coupe glasses, but I don’t think they’ll work well with crushed ice + drink, right?
yes! so crushed ice in your glasses, but put ice cubes in your shaker to keep things cold. and you can definitely make the syrup 1 to 2 days ahead of time! stick it in the fridge. you can use coupe glasses for sure!
