Tater Tot Breakfast Skillet. (+ We’re Hiring Again!)
Um, hi.
I’m very sorry to be doing this to you on a Monday. Making you eat tater tots and all. With tons of cheese. And bacon. And eggs!
God this is the best Monday EVER, actually.
But first!
Super exciting news. We’re hiring for a few new positions over here (two local, one remote!) and if you’re interested in learning more, check them out here. Okay now. Back to tots.
I’m going to tell you something that may be shocking.
I
don’t
love
tater tots.
I just don’t. At least, I didn’t. Until now.
It was a school lunch thing, Tater tots reminded me of elementary school lunch and trust me – I was NOT a school lunch snob. I mostly bought my lunch in elementary school and enjoyed it (even the very questionable Salisbury steak, like that the heck was it actually?). School lunch table antics I did not enjoy. Once I got in trouble for passing a note AT LUNCH. What? Why?
Here’s the other thing. Eddie is obsessed with tater tots. Not just regular tots, but sweet potato tots. You know how I always talk about his long standing meal ruts? Like how he will eat one thing for eight months everyday and then never eat it again?
WELL.
He did that.
With sweet potato tots.
For breakfast!!!!!!
Last year, he was in a HUGE sweet potato tot plus egg phase. My friends and family found this insane because he wakes up super early to work out – and he eats a big breakfast first. First thing in the morning he would actually bake sweet potato tots and then top them with fried eggs.
Like on weekdays. At 5am.
I’m super curious to hear your thoughts on this.
Anyhoo, he got over that late last summer. He was completely done with tots. It actually wasn’t until recently, like within the last month, that he ate them again for the first time since. With dinner. I’m pretty sure the tots-for-breakfast phase is over. Thankfully.
So I have to say that I was a little nervous about serving him this tater tot skillet. Even when eating his tots covered with eggs, he is still sort of a tot purist. I wasn’t sure if he’d like them mixed IN something.
But when bacon and cheese are involved, what can go wrong?
Nothing. Absolutely nothing.
OH MY GOSH. New favorite meal alert. Breakfast AND dinner, because it’s the best. This is utterly ridiculous in the most fantastic way. It has texture and it’s satisfying and it kind of tastes like French fries and breakfast had a baby in one delicious trashy way.
Now isn’t that just exactly what you want to eat?
Tater Tot Breakfast Skillet
Ingredients
- 6 slices bacon chopped
- 1 sweet onion diced
- 1 red bell pepper diced
- 4 cloves garlic minced
- 8 large eggs
- ¾ cup whole milk
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 ounces freshly grated white cheddar cheese
- 2 cups frozen tater tots
- 3 tablespoons snipped chives or scallions for topping
Instructions
- Preheat the oven to 350 degrees F.
- Heat a large skillet over medium heat. Add the bacon and cook until just crispy and the fat is almost rendered. Stir in the onion, peppers and garlic. Cook until the vegetables soften and the bacon is fully crispy. Turn off the heat.
- In a bowl, whisk together the eggs, milk, salt, pepper and cheese. Stir the tater tots into the egg mixture. Pour the mixture over top of the bacon and veggies in the skillet.
- Bake the skillet for 35 to 45 minutes, until the eggs are set. Serve immediately.

Do you think this would reheat well? Like if I made it on Sunday afternoon, would it work for a quick breakfast during the week? I’ve reheated other potato casseroles before, but never tater tots.
i’m on the fence! so eddie did reheat it for dinner and loved it. but reheating multiple days… while it would work, i don’t think that the tater tots would stay crispy. so i think it depends on how important that part is to you. :)

i basically like anything for breakfast (except maybe a full on steak or something of that nature), so tater tots topped with eggs sound pretty good to me in the morning, haha. anyways, this sounds delicious, and reminds me of a breakfast casserole that my aunt makes for christmas morning (:

Oh my! I have to try this one. My husband would love it. He’s originally from Minnesota, so I have to make him a tater tot hot dish about once a year. This looks so much more delicious than the classic version with ground beef and cream of mushroom soup.
i had no idea this was such a thing in minnesota, haha! eddie would love that classic version too.
Hi! This looks amazing. Quick question, if two of my family members can’t have cheese, would it hold together ok if I made it without?
hmmm i think that since the eggs would bake, it would hold, but it might be a little on the dry side? if you try it, let me know!
I love the idea but am worried the tots won’t stay crispy when they are cooked in an egg mixture? What is the texture like? (I get really weird about textures!)
As for the early morning ritual–I can’t blame Eddie! I love waking up early to go to the gym before work (I’m usually too exhausted after) and, although I can’t work out on a full stomach, I empathize with needing to prepare!
i am the same way and NEED texture! shockingly the tots do stay crispy, i think because they sort of “float” to the top and get crispy on top. when it comes to reheating though, they might not stay super crispy, you know?
i’m totally with you on the morning routine (i can only work out in the morning too!) but i think it blows my familys’ mind that he actually COOKS an entire full meal in the morning before – ha!
This sounds like a dream come true for me! My husband LOOVES tater tots, and also goes in phases of eating only one thing for months on end.

Jessica!!!! How can you do this to me?? I’m having granola for breakfast. It’s not even homemade. Boooooorrrriiing! Now, tater tots remind me of my mamma. Every time we’d go visit them with our kids, mamma would have tater tots for them. They loved the tots. Now you’re taking fried tots — I think it’s Minnesota’s state food — and adding more calories to them. I lOVE it! I imagine I would have to get up at 3 a m and work out so I could have them for breakfast. My grandkids would go nuts over this dish. Hmmmmmmm! I’ll have to surprise them. I’d love to be an assistant. Unfortunately, we travel a lot. Have a great day.

Perhaps this is a silly question, but if I don’t have a skillet, am I safe to assume that I could cook this in a good ol’ pyrex casserole dish? This sounds delicious and I would love to put it on my Easter brunch menu, but I don’t have an oven safe skillet.

Any idea how this would do as a make-ahead and bake later? Or bake then freeze?
i think you could make the mixture without the tots the night before, refrigerate and then add the tots right before baking? only thing is that the bacon may not stay crispy – depends on if you care about that!

Looks yummy! You list garlic in the ingredients list, but I don’t see where you add it to the recipe. I would guess that you add it to the partially sautéed onions?

OMG.. my husband sounds like your honey. When I go shopping I know to bring the freezer bag bc I need it for the tots. I keep track on your recipes and what is going on but usually follow behind the scenes…however I had to tell u that this was delish I had to try it even though this really isn’t my jam but man was I wrong!!! This was even delish heated the next extra day. Thanks for the tot recipe…we (I) am finally just breaking(him) away from the plain ol’ dry tots!!! Thanks for the recipe. I skipped the bacon (only because I didn’t have it), used less cheese, and used cauliflower tots. It tasted great.
Ugh, this was SO GOOD! My husband doesn’t do dairy, so used almond milk and daiya cheese and it still was the best part of our weekend. I loved how easy it was to throw together and just reheat all weekend.
If you haven’t done so, you and Eddie need to go to Shady Grove in Shadyside and try the sweet potato tots there. Best ever.
I have never made homemade tater tots before — the thought never even crossed my mind — but I think it’s a must-do now!
I made this for breakfast this morning (Sunday brunch at home, I suppose). I’m not a fan of tator tots on their own, but this was delish. Makes a ton so I’ve got breakfast ready for the rest of the week but also will keep it in mind the next time I need to make breakfast for a crowd. I’m always looking for ways to increase my veggie intake so I added some frozen spinach and red cabbage (both leftover from other endeavors). It worked out really well. Just be sure to make sure the pan is well greased. I had a bit of sticking but that was my fault.

If I wanted this to serve approx. 10 people instead of 6, could I double the recipe & dump it into an 8×12 Pyrex & bake a little longer?
