Halloumi Hummus Bowls.
My new excuse to eat color? Halloumi hummus bowls!
If I found it appropriate, I’d totally grill some halloumi every single day and eat it for lunch. The slightly crisped outside, the creamy but sort of chewy inside, the intense savory flavor – it’s just so good. Can we make grilled halloumi a regular side dish, please?
Be gone, cheese overwhelm!
I am in LOVE with this for lunch or dinner. It has been my favorite thing lately and feels like such a treat. It makes for an awesome side dish if you’re feeding a crowd – or heck, even just for your family dinner. But I definitely consider something like this to be a meal.
And really, any excuse to cover my entire dish in hummus is something I welcome. Halloumi hummus bowls everyday please.
First, couscous is probably one of my favorite grains. I was eating it way before I discovered quinoa and something about the tiny rounds? Love ‘em. I enjoy it more than rice too, but I find that I rarely make it.
Changing that, stat. (I found this tricolor version at my grocery store.)
Cucumbers and tomatoes are easy for me to find right now in the thick of winter. But once warmer weather arrives, I totally plan on adding a ton of different vegetables. I think this would be so good with summer squash!
I love simply adding a scoop of hummus on top so you can use it as you wish. Toss the bowl a few times to disperse the hummus or scoop a bit up with every bite.
Yes yes yes.
Oh! Then if you want more of that brine-y mediterranean flavor, you could add Kalamata olives too.
Speaking of, I’ve been on a crazy olive kick. My mom always talks about how I’ve loved since I was a baby, so I’m set on making sure Emilia loves them too. Max is a no-go. He won’t touch them.
Emilia is into them though, which makes me so happy. They have been an afternoon snack for us and maaaaybe (just maybe) in a pinch I grabbed a snack cup of olives for breakfast.
The salty savory flavor is probably why I love halloumi so much. To me, it’s such a salty cheese. I lose my mind over the texture and find it to be super satisfying.
Of course Eddie wants some extra protein with this meal. He requests a version of this chicken almost every week so once it’s shredded, you can toss it right into this salad and it has so much flavor. You can even take this bowl + that chicken and toss all of it over greens! I love that there are so many options.
Crispy, roasted chickpeas are always an option too. Always.
I’m just living for easy, different dinners right now.
Halloumi Hummus Bowls
Halloumi Hummus Bowls
Ingredients
- 2 cups cooked couscous (I love tricolor pearl couscous)
- 8 ounces halloumi cheese, sliced lengthwise
- a drizzle of olive oil
- 1 pint cherry tomatoes, halved
- 1 seedless cucumber, sliced
- 1 tablespoon olive oil
- 1 lemon, juiced
- 3 tablespoons fresh oregano
- 2/3 cup hummus
- pinch of salt and pepper
- lemon wedges for serving
Instructions
- The first thing I do is cook the couscous and let it cool in the pan while I make everything else.
- To crisp the halloumi, heat a nonstick skillet over medium-high heat. Pat the halloumi dry with a paper towel. Add a drizzle of olive oil to the skillet. Add the halloumi and cook until golden brown on each side, about 2 to 3 minutes per side. Remove the halloumi and place it on a plate. If you want the halloumi to be warm when serving, you can assemble the salad first!
- To assemble the salad, add the couscous to a large bowl. Add a pinch of salt and pepper and toss. Squeeze in the lemon juice and add the tablespoon of olive oil, tossing well. Toss in the tomatoes and cucumbers. Stir in the oregano. Divide the couscous between two (or even 4!) bowls. Add a few slices of halloumi on top along with a scoop of hummus. Spritz on extra lemon and serve.

We LOVE love love halloumi, but I haven’t been able to find it since summer. Any thoughts on where to buy it? I’ve tried Trader Joe’s, Kroger and Whole Foods. Am I just overlooking it at Whole Foods?
oh wow! really? i just find it at my local grocery store (giant eagle). i wonder if your store stopped selling it?!
Halloumi is the best thing ever. Some stores treat it as “seasonal” (late winter/early spring) so only stock it then, but lately I’ve been able to find it at Whole Foods and Safeway all year round.
I have found it at my Fred Meyer (Kroger owned) in the specialty cheese section. You might check with them and they usually will special order for you if you ask. Might check to ask. If you have a Murphy’s Cheese at your Kroger, they should be able to get for you.
Literally like 12 hours ago I was rereading Rachel Miller’s (The REWM) Goodful meal plan club posts on Buzzfeed and debating trying my hand at homemade hummus since she raved about it. This also TOTALLY feels like a meal I’d see on Rachel’s IG stories because she’s all about that high quality with low fuss. And this seems like the perfect meal to let a homemade hummus shine. Can’t wait to try this!

This came at the perfect time. I just bought Halloumi at the store and I have all the other ingredients. I was going to grill my cheese and just eat it. LOL. This will make me feel less guilty about eating cheese as a main dish.

Made last night! It was so good. Husband and I enjoyed it. My little’s thought I was tricking them with the pearl couscous. Just another day with my kids. Hubby and I thought it was so good. I am excited for lunch today with the leftovers!

I had to google Halloumi since I’ve never heard of it. What does it taste like? This recipe is a spin off of traditional tabouleh!
it’s a very chewy and delicious cheese, and then once grilled/slightly fried, it get’s this crisp on the outside – it’s so good!
Halloumi is so delicious! My husband is Cypriot and his mom gets Halloumi mailed to her from family that still live in Cyprus and so we have some frozen packs and now I know what else to do with them!
Some other ways we use Halloumi: boil pasta in chicken broth until it reduces and grate Halloumi on top. Soooo good. And
of course grill Halloumi and top with honey or eat with watermelon! So squeaky! Haha.

I’m making this without Halloumi and fresh oregano. I couldn’t find either at the store today. I have dried oregano I’ll use much less of it, and I added some roasted chickpeas to add something else to it since I don’t have cheese.

Yum! This was SO good! I used farro instead of cous cous (love the chewy texture and how it goes with the halloumi). I also tossed in some spinach leaves. Definitely will be on repeat! I might try adding some mint leaves next time too.

I made this this weekend for my parents (who had never even heard of halloumi, but I was able to find it at their small town western Mass grocery store) and they loved it! I trashed it up extra with roasted chickpeas, bell peppers, olives, and parsley. Made my own hummus with Cookie + Kate’s best-ever recipe. It was a hit!

Made it, Ate it, Loved it. Used regular cous cous with greek salad on top and to scoop up all the hummus goodness…spicy baked pita chips on the side.

My new favorite base is Trader Joe’s Harvest Grains blend. It’s a combination of Israeli couscous, orzo, baby garbanzo beans and red quinoa. Omg. Amazing. I’ve eaten this dish a bazillion times since you posted it in February. It is DELICIOUS!!!!!
I am OBSESSED with this recipe. I made it for lunch today and it was ~amazing~. The flavors are so complex and delicious. I used farro because that’s what I had on hand but otherwise made as directed. Cannot wait to have more tomorrow!

Its 70 degrees in Boston right now, so I thought perfect! Grill Halloumi and make this. I WENT TO THREE DIFFERENT CHEESE SHOPS. ZERO HALLOUMI!!!! Wtf. Its basically summer! I want my cheese!

When I went to Israel they ate olives (and this type of meal) everyday for breakfast! And I probably ate ten pounds of Halloumi over the course of a week 🙈!!!!

FYI couscous is not a grain. It’s made from semolina. Started as a byproduct of pasta manufacturing.
Finally made this last night and lordy, lordy, what a divine thing!!!! Will now be my lunch and dinner for the next couple days and then I’ll go into withdrawal, for more.

Loved this lemony couscous, but don’t know what happened to my halloumi. Sliced it thin like your picture and fried it less than two minutes on each side. It came out very chewy, so I missed the creamy goodness. Maybe I’ll try again and just let it get a bit of color before flipping it…less than 30 seconds each side?
I’ve never tried halloumi before I made this – SO GOOD. This recipe is 100% being added to my “can’t think, need dinner” rotation for quick, easy, and delicious meals after a long day of work. Thanks for the great recipe!
Very simple and delicious. Used roasted zucchini because I didn’t have cucumber and toasted the void cous first in butter and paprika. Really happy with this.
