What To Eat This Week: 4/19/20.
Week six+ of quarantine calls for delicious meals!
This week there are lots of meals that work for leftovers too! And a delicious breakfast and lunch idea.
First up! This thai pork tenderloin with soba noodle salad is SO good – so crisp and fresh. And if you don’t want to grill the tenderloin, you can roast it at 450 degrees for 30 minutes or so. The leftovers are delish.
This smoky chicken enchilada skillet is perfect for Taco Tuesday!
Marinated chickpea panzanella is a meal that can stretch! It’s super flavorful and very satisfying.
We love breakfast for dinner and these tortilla eggs are no joke. They are delicious. Serve with some roasted broccoli for veg on the side.
This hot honey pepperoni detroit style pizza is everything. We have pizza night every other week and this one is so good. If you can’t find yeast to make dough, order a pizza kit online or see if you can buy dough from your local pizza joint!
And kung pao cauliflower is always a winner. Always!
Make a batch of blueberry breakfast cookies to get you through the week. The do double duty as snacks too!
For lunches, you can make homemade veggie cream cheese to use on bagels or toast or sandwiches!

Really great options here! We love breakfast for dinner on Sundays (super easy, though with everyone home during the week now, not quite as vital). Tortilla eggs might be up tonight! ;)
I love that pork tenderloin with the soba salad – it’s so good that I make it on the regular. I really wish I could find yeast – I need to make the deep dish pizza.
