What To Eat This Week: 5/10/20.
We’re heading into a new week with a bunch of delicious recipes!
This week has a little bit of everything! Breakfast, burrito bowls, salad and everything.
Starting off the week with cashew shrimp and mango stir fry. This is so good! We love the leftovers too.
Quinoa burrito bowls are up next! These are a little high maintenance depending on what you add, so make them your own and use the ingredients in your kitchen.
I suggest making some guac for the bowls above, and then making these pulled chicken guacamole sliders for Wednesday! These are a huge favorite and perfect if you’re craving warm weather like I am.
Always love something breakfast-ish for dinner, so these broiled fontina toasts with poached eggs are a go. These are just amazing.
Friday pasta night! Garlic sauce pasta is amazing. You can use whatever meat you want or skip it entirely and do a bunch of vegetables!
Finally, this pecan crusted chicken salad is such a lovely weekend meal. It’s so flavorful!
As for lunch, make a version of this strawberry quinoa (make some extra quinoa with the burrito bowls above!) with fresh mozzarella instead of burrata. I did it last week and it was really good! Also going to prep this chipotle sweet potato skillet for easy breakfasts!
