What To Eat This Week: 11/15/20.
We have a super delicious, satisfying week coming up!
This week we have lots of brussels and kale to try to streamline the menu. If you don’t love those, swap in one of your favorite meals!
This week, kick things off with pumpkin lasagna roll ups! They are so seasonally delicious, I cannot get enough. You can prep them ahead of time too!
Next on the list, this crispy rice salad with kale. This is crazy satisfying and fresh at the same time.
Cauliflower schnitzel sandwiches are perfect for Wednesday! Crispy, baked cauliflower and caramelized onion mayo. It’s so so good.
Next, go with brussels sprouts tartines. These are a little high maintenance but seriously comforting and incredible.
Make sure you have some leftover brussels so you can make this shredded brussels and kale spaghetti.
Finish things off with this butternut squash salad. If you’re all kale-ed out, you can use your favorite kind of green here. The apricot dressing is really amazing!
For lunches, I’m going with my favorite marinated beans! Love to have those on toast. And for breakfasts, can’t get enough of the salted maple granola.

All very nice recipes. Even though we ARE having our usual turkey dinner w/all of the trimmings this year, your alternatives are lovely. I plan to save my favorites to serve on special occasions in the future. Happy Thanksgiving to you and your family :-)
