Today I’m sharing 10 of the best weekday breakfasts!
I’ve always been a breakfast person!
Even as a kid, my brothers would often skip breakfast but I really liked it. Some days I eat it later than usual, but I still consider it breakfast.
So I threw together my favorite quick weekday breakfasts. Most of them are ones you can prep ahead of time too! Work days always call for a fairly quicker breakfast, and these are the ones I love the most.

This vanilla bean chia pudding is a year round staple for me, but in the winter I love to prepare this way. Blood oranges are so good! A little shaving of dark chocolate go a long way and I love adding something crunchy like almonds or walnuts.
Immunity boosting smoothies are another huge fave! Especially if you make my make-ahead smoothie packs. I don’t always layer them but both flavors are delish.
No bake oatmeal peanut butter bites are always a winner! The kids love these. I make a double batch and we can have them for snacks or even dessert, but I’ll also grab one or two in the morning if needed.
You probably heard me rave about my breakfast quinoa for years. This meal is unbelievably filling. You can add whatever fruit and nuts you’d like and I love serving it with coconut milk!
I love this strawberry cashew smoothie too. We always have frozen strawberries on hand (fave fruit!) but this is really good with blueberries too! Plus it has hidden veggies.
I definitely prefer cold overnight oats to warm, but I can’t pass up this pistachio coconut oatmeal. Some of my favorite flavors in here. It’s like a hug in a bowl!
My pumpkin protein pancakes are something I make year round! They can easily be frozen or stored in the fridge and reheated. And they are just so darn good.
This oatmeal latte is UNREAL. It seems odd at first, but really it’s like espresso flavored oatmeal with steamed milk and a little extra expresso poured over top. It’s so good and so satisfying!
This salted maple granola is amazing! You can easily make a big pan of it and store it for the week. Serve with yogurt and fruit or with milk like cereal!
Technically I’m sharing 11 breakfasts with you, because I had to include this shaved egg avocado toast. I eat this almost every week (even if I just slice the eggs instead of shave them) and it’s the most filling breakfast. I actually prefer savory breakfasts, but they take a bit longer than quick thrown together sweet breakfasts. Unless we’re talking quickie avocado toast!
Finally, peanut butter overnight oats with 5 minutes chocolate granola. Def my favorite of the bunch. So filling and who can pass up the PB chocolate combo?!

I make the vanilla bean chia pudding once a winter and the pumpkin protein pancakes multiple times in fall/winter. I’ll have to try some of these others. Actually I believe I’ve tried the strawberry cashew shake too.
