What To Eat This Week
Kick things off this week with my brown butter lemon salmon. It’s so fast and easy! I love to served it with these buffalo brussels sprouts too. And maybe some rice if you wish!
Next up, parmesan crusted chicken salads. One of my most favorite salads ever! It’s so hearty and satisfying.
Midweek, go with this potato chip frittata. We love breakfast for dinner and this is amazing.
Bolognese stuffed peppers are up next! I make the ones in the post with ground turkey, but you can use my lentil bolognese too. So delish.
Throw in another winter crunch salad somewhere! I know I shared it a few weeks ago but citrus is wonderful right now. Adding in crispy chickpeas here is soooo good.
Finally, wrap up dinner with this bacon brussels fried rice. Top it with an egg and it’s perfection!
Smashed chickpea salad is what’s for lunch! On toast of course. And for breakfasts, I’m going with an apple cinnamon oatmeal latte.

Do you think it’s possible to do the chicken for the Parmesan Crusted Chicken Salad in the air fryer? If so what temp/time would you recommend?
