If you love chewy overnight oats like I do, this s’mores version is going to become your new favorite breakfast. I love to prep overnight oats for the week – they even make a great snack. This s’mores combo is flavorful with lots of texture so, so delicious.

I know that overnight oats can be rather polarizing – not everyone wants to eat cold oats and some people don’t like the chew and texture. However, I LOVE THEM. Like, adore them. Triple love them. 

The chewy, cold texture is exactly what I love for breakfast. Plus, the fact that you can add layers of flavor and tons of toppings always gets me excited too. A variety of overnight oats is what keeps breakfast exciting here. The options are endless.

My go-to recipe? These chocolate peanut butter overnight oats. Despite those (and these!), I prefer a savory breakfast. However, if I ever want a sweeter breakfast, I would choose overnight oats before anything else.

Now, I’ve made s’mores-ish overnight oats before, but it wasn’t until I found a little gem for our hot cocoa bar and discovered the best ingredient.

My kids love these tiny marshmallows – they are like the ones that come in hot cocoa packets with marshmallows. Tiny bits that are dehydrated and soften when in liquid… and the fact that you can buy them separately? Um, they are the best! After I discovered them last year, I bought this bag in bulk for our hot cocoa bar and displayed them in an apothecary jar with a lid.

Now, they aren’t required for the s’mores oats, but let me tell you how I use them.

When I make overnight oats, I usually add a drop of maple syrup or honey for sweetening – whichever flavor will work better with my oat combo. For the s’mores oats, I simply add a few of these marshmallows which sweeten it perfectly!

Not only do they sweeten the oats, but they are marshmallows and TASTE just like marshmallows, therefore enhancing the s’mores flavor even more. 

I am obsessed.

Of course, you can use regular mini marshmallows. If you do that, you might still want to sweeten your oat base a bit.

If you want to use a vanilla-flavored milk, that also adds to the flavor. I still always add vanilla extract, no matter what.

Graham cracker crumbs also go in the overnight oats base. So the base consists of old fashioned rolled oats, milk, vanilla extract, chia seeds, mini marshmallows and a bit of graham cracker crumbs. 

So easy to throw together!

The other thing I love to use in these s’mores oats are chocolate covered graham pieces. You can use regular chocolate chips or mini chocolate chips instead, but I find that using the chocolate covered grahams is perfect. I usually get these ones from target, but I know whole foods and a few other stores have them.

If you can’t find those, just crush up some regular graham crackers and use chopped chocolate!

Once the oats sit overnight, I top them with more graham cracker crumbs, a tiny sprinkling of marshmallows and one of the chocolate covered graham pieces. 

So chewy, so crunchy, so satisfying. They will keep you full for hours.

Ingredients

  • 1 cup old-fashioned oats
  • 1 tablespoon chia seeds
  • ½ tablespoon graham cracker crumbs
  • pinch of kosher salt
  • 1 cup milk, any variety works
  • ½ teaspoon vanilla extract
  • 2 tablespoons dehydrated mini marshmallows
  • for topping: mini marshmallows, graham cracker crumbs, chocolate covered grahams

Instructions 

  • Note: I like to use the dehydrated mini marshmallows as they add sweetness to the bowl. If you use regular (soft) mini marshmallows, you might want to add a teaspoon or so of honey or maple syrup to your oats when mixing them.
  • Stir together the oats, chia seeds, graham crumbs and salt in a bowl or jar. Stir in the milk and vanilla extract. Stir in the mini marshmallows. Cover and refrigerate overnight or for at least 6 to 8 hours.
  • Before serving, sprinkle a few more mini marshmallows, graham crumbs and chocolate chips or chocolate covered grahams.
