Hello and welcome to one of the best things I have ever made. This meal is so darn good, tastes so darn fancy and well, can be finished super quickly. It’s amazing. Flavor + ease is the best combo!

I was hesitant to share this recipe because I don’t like to jump on the viral food trend at all. In fact, I try to steer clear of them. But oh my gosh – this one is going to be in our rotation for years and years. I can’t even explain how delicious it is!

If you’re not aware, earlier this year a viral smash burger taco erupted (mostly on tiktok, then instagram) and was everywhere. Essentially, a smash burger pressed into a tortilla and cooked on a hot griddle, loaded with toppings. I made a version like this using my own house sauce and we liked them a lot. Which got my wheels turning, so then the next time I made them, I used ground turkey.

And then, I did a spin on my Mediterranean turkey burgers, but smashed into tortillas. And WOW.

So here we are! A garlicky, dill seasoned turkey burger, smashed into a flour tortilla, smashed onto a pan and seared in butter, then topped with alllll the best toppings. Crumbled feta, roasted red peppers, pickled onions, tomatoes.

Oh and a quick and easy yogurt feta sauce because we can never have enough feta!

Eddie just about lost it over how delicious these are. They don’t look super special, because frankly, smashed turkey on a tortilla just isn’t a beautifully vibrant dish. But the flavor is top notch and whatever you choose to put on the burger? Well that elevates it like whoa.

This is how they come together:

I like to get all my toppings and the yogurt feta sauce prepared first. When the burgers are done, they are done and ready! So having everything ready to go makes it that much quicker. I chop the lettuce, tomatoes and red peppers. I make the pickled onions if needed and make the yogurt feta sauce too. 

The pound of ground turkey gets divided into six equal portions. Easy! I season it with salt, pepper, dill and garlic powder, then take each portion and press it into one side of the tortilla. Yes! This seems crazy (at first I was like hmmm… ), but the burger ends up super thin (my favorite kind) and cooks very quickly. The tortilla also helps to flip the burger. 

The turkey size gets smashed down into a hot pan sizzling with butter. I press it down and smash a few times while it cooks too. This only takes a few minutes!

Then it’s time to flip. This is so easy, because the burger is pressed against the tortilla. Flip and cook the other side until browned and crispy. Add some feta right on the burger too so it warms. 

Toppings time! Add whatever you love – shredded lettuce and roasted red peppers are a must for us. You could also add cucumbers and hummus. A drizzle of the yogurt feta sauce is everything. Finish with pickled onions, for sure.

You want to fold the tortilla up shortly after making because it’s still warm and pliable. This is so comforting, so satisfying and incredibly flavorful!

Ingredients

  • 1 pound ground turkey, (I like 94% lean turkey)
  • 6 fajita-sized flour tortillas
  • kosher salt and pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons dill weed
  • 1 to 2 tablespoons butter
  • cup crumbled feta, or more if you wish
  • pickled onions, for topping
  • shredded lettuce, for topping
  • chopped tomatoes, for topping
  • chopped roasted red peppers, for topping

yogurt feta sauce

  • ½ cup plain greek yogurt
  • 1 lemon, juice freshly squeezed and zest freshly grated
  • 1 tablespoons chopped fresh dill
  • ¼ cup crumbled feta cheese
  • kosher salt and pepper

Instructions 

  • Heat a large nonstick griddle, flattop grill or nonstick skillet over medium heat. Any flat nonstick surface will work, the size just determines how many burger tortillas you can make at once.
  • Divide the ground turkey into six equal portions. Take each portion and press it onto a flour tortilla, flattening it out until it almost reaches the edges. Sprinkle the turkey all over with the kosher salt and pepper, as well as with the garlic powder and dill weed.
  • Melt 1 tablespoon of butter all over the nonstick surface once it’s hot. Place the turkey tortilla on the skillet/griddle, turkey side down. The meat should be sizzling. Use a spatula, smaller skillet or pot to press down the top of the tortilla and really smash the turkey into the hot pan. I do this a few times as the turkey cooks. You want it to be super brown and golden - it will take about 5 to 6 minutes.
  • Flip the tortilla over so it is now tortilla-side down. If desired, you can add a little more butter to the skillet, but I find that my tortilla browns up nicely without it. It will depend on your skillet and the fat content of your turkey. As soon as you flip the tortilla over, sprinkle about 2 tablespoons of crumbled feta over the turkey burger. Cook this side for another 3 to 4 minutes, until the tortilla is golden and crisp and the cheese is warm. Feta won’t completely melt, so don’t worry about that part.
  • Remove the tortilla from the skillet and immediately top it with chopped tomatoes, roasted red peppers and shredded lettuce. Top with pickled onions and the yogurt feta sauce. Fold it up like a taco and enjoy!

  • Whisk all ingredients together until combined. This stays good in the fridge for a day or two - just mix again before serving.
