Winter Hummus Bowls.
These winter hummus bowls are so delicious and satisfying! Seared chicken, massage kale, roasted broccoli and farro come together to make the most filling meal. Add your favorite toppings and go!
This is my kind of winter bowl.
This winter hummus bowl is filled with massaged kale, farro, seared chicken, radish matchsticks, roasted broccoli, a sprinkle of feta and pepitas. It’s super filling and so delicious!
Oh, and did I mention the hummus?!
Of course there is hummus!
I’ve got some real, non-holiday food for us today.
I love meals like these. Throw everything in the bowl and go. The hummus acts like one big dip. And we are huge condiment people over here. Emilia and Jordan can barely start a meal without multiple dips by their side.
This is also one of those meals that comes together great if you have a lot of leftovers in the fridge. Because here’s what we’ve got going on!
A spiced seared chicken. But any leftover chicken would work!
Massaged kale salad.
Roasted broccoli.
Farro, or any cooked grain you enjoy. Or have left!
Radishes. For that spicy crisp.
Pepitas. More crunch!
And feta. All crumbly and delicious.
This is how it comes together:
Roasted broccoli is my go-to, because I almost always have it on hand! It’s also something that I don’t mind preparing ahead of time. However, if I don’t, it only takes about 20 minutes.
I like to sear this chicken with smoked paprika, oregano, garlic and dill. Lots of salt and pepper too. I finish that off in the oven too.
While the chicken is cooking, I massage the kale. Letting it sit for a bit removes the bitterness and chew. This is key.
I almost exclusively use leftover grains here, or something I prepare ahead of time. Because it’s too many moving parts to roast, massage, grill, cook on the stovetop – you get it. So while I’m on a farro kick right now, it’s not the only option. I also like quinoa here. And even orzo.
Then I start piling things on in the bowl. I start with a big spoonful of hummus. Next, I add on the massaged kale and the farro.
Then, it’s time for the chicken and roasted broccoli. I throw the radish sticks on here too!
Finally, some toppings. Crumbled feta is perfect because, well, CHEESE. And roasted pepitas for some crunch.
I find that this bowl doesn’t need dressing. With how juicy the chicken is, how creamy the hummus is – it really works and comes together. But if you’re feeling like you NEED a vinaigrette over here, my winter pomegranate vinaigrette is lovely here. So is my citrus vinaigrette!
It’s just so super delish.

Winter Hummus Bowls
Ingredients
- 4 cups broccoli florets
- kosher salt and pepper
- 2 to 3 tablespoons olive oil
- 2 chicken breasts
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried dill4 to 6 cups shredded kale
- ½ lemon, juiced
- ½ to 1 cup hummus, or as much as you want!
- 1 cup cooked farro, rice or any grain
- 3 radishes, cut into matchsticks
- ⅓ cup crumbled feta cheese
- ¼ cup roasted, salted pepitas
- fresh lemon, for spritzing
Instructions
- Preheat the oven to 400 degrees F.
- Place the broccoli florets on a sheet pan. Drizzle with 1 tablespoon olive oil. Season all over with salt and pepper. Roast for 15 to 20 minutes, until golden and tender.
- Season the chicken all over with the salt and pepper, smoked paprika, garlic powder, oregano and dill.
- Heat an oven-safe skillet over medium heat and add 1 tablespoon of olive oil. Add the chicken and brown on both sides, about 5 minutes per side. Turn off the heat. Place the chicken skillet in the oven for 5 to 10 minutes, or until it reaches an internal temp of 165 degrees F. Let the chicken rest for 5 to 10 minutes. Slice or chop it into chunks.
- While the chicken and broccoli cook, add the shredded kale to a large bowl. Drizzle with 1 tablespoon olive oil and the lemon juice. Massage with your hands, coating all the kale, for 2 to 3 minutes. Season all over with salt and pepper.
- Now it’s time to build the bowl! Spread a dollop of hummus on the bottom of the bowl or deep plate. Top with the shredded kale and a few spoonfuls of the farro.
- Top with the chicken. Add the radishes, feta cheese and pepitas. Spritz everything with fresh lemon and serve!

Delicious and so easy to make! My husband and I both loved this. It was easy to substitute ingredients that I had on hand – I used a wild rice blend and Romaine lettuce instead. Will be making again!
This was super delicious! I made it with brown rice and left out the kale, and it was easy and very tasty. Don’t skip the feta cheese and lemon squeeze at the end-they make the dish (along with the hummus)!
This was delicious! I went to the farmer’s market this morning and spontaneously bought broccoli and was trying to think of something to do with it and I’m so glad I remembered this recipe. I love that you can use it as inspiration and do whatever you want, but I followed it pretty closely this first time and it was perfection. The combo of flavors is amazing and it’s healthy and satisfying. This is definitely going to be a staple moving forward.
