This chopped fruit salad is one of my family’s favorite dishes to have! It’s refreshing and delicious, with hints of lime and mint, and amazing as a chopped bowl or served with cinnamon sugar chips. We love it! Every salad is better chopped.

This rainbow fruit chopped salad is packed with all of your favorites, cut into bite sized pieces and tossed in refreshing lime juice and mint. It’s such a delicious salad that screams summer and honestly, my entire family goes wild.

And the best part: you can use whatever fruit you’d like! 

In the history of the most basic recipes, this may be the MOST basic I’ve ever shared here in almost two decades.

Fruit.

Chopped up.

But I saw this chopped fruit salad going around tiktok and I was like… oh my gosh, that is my DREAM fruit salad! I live for a chopped salad in general – it’s one of the characteristics that got me eating greens salad in the first place. Growing up as a true veggie hater, a chopped salad is the best way to start.

You get a bite of everything!

I would also be remiss if I didn’t mention my true obsession with the old school (90s, maybe?) pampered chef fruit salsa, served with cinnamon sugar pita chips. Remember that trend?! I was in LOVE. 

This reminds me of that, in the best way possible. It’s not chopped small enough to be salsa. But everything is chopped uniformly, in a tiny chunk, so you get a piece of each fruit on your spoon. I freaking love it.

Now from what I’ve seen, some people have made an orange dressing to go with this. Maybe a dressing like the one on this fruit salad.

When it comes to citrus flavors, I’m less of an orange person and much more of a lemon lime person. Heavy on the lime, for sure. I like orange, but I love lime.

So my dressing for this fruit? Lime, salt, fresh mint. 

Doesn’t that just sound (and taste?!) like the most refreshing addition? 

Not that a fruit salad ever needs a dressing, per se. But if you want to make this fancy and elevated, if you want to give it a little something extra, lime and mint are the way to go.

And the pinch of salt! Don’t forget that. It brings out the sweetness to a crazy extent.

I’m sharing this now because it’s been on repeat for us all spring – my kids absolutely FLIP. They are the ones that call it the rainbow salad. They already ate a ton of fruit before this salad. I mean, we should have stock in berries. 

But this has upped it even more. A true obsession!

And P.S. – the cinnamon sugar pita chip also works with just. And tastes like 1999!

Ingredients

  • 2 cups blueberries
  • 2 cups chopped strawberries
  • 2 cups chopped cantaloupe
  • 2 cups chopped mango
  • 1 cup chopped kiwi
  • 1 cup chopped pineapple
  • 1 cup chopped mandarin oranges
  • 2 tablespoons freshly squeezed lime juice
  • 3 tablespoons chopped fresh mint
  • ½ teaspoon kosher salt

Instructions 

  • As a note, I try to chop everything to be around the size of the blueberries. They are your guide, so the size may differ! Combine all ingredients in a bowl and toss well. Of course you can use any fruit that you love. Serve!
  • This lasts one or two days in the fridge, but is best served at a party shortly after chopping.
