Cheesy Sweet Potato Crisps.

I’ve mentioned it before, but Mr. How Sweet is a huge fan of sweet potatoes.

In fact, they are one of his favorite foods, only coming in behind chicken and steak.


Speaking of chicken, there is a tic-tac-toe playing chicken at the Rivers Casino here in Pittsburgh. Mr. How Sweet has been talking about it for weeks. He wants to see that chicken more than he wants to peep in Megan Fox’s window. He says that he is positive he can beat the chicken at tic-tac-toe. He probably can. After all, he eats so much chicken that he probably thinks just like one.


The most common side dish to Mr. How Sweet’s chicken is a big pile of sweet potato fries. Because, as you know, if he doesn’t have a side his 2-year old tendencies kick in.

He doesn’t get bored of food, but I do. You know I’m always looking for a way to spice things up.


Enter these cheesy, crispy sweet potatoes.

It is only recently that I have learned to love sweet potatoes in a savory manner.

I was always an advocate for  ’sweet’ sweet potatoes – loaded with cinnamon, butter, and marshmallows. Chocolate and bacon work, too.

Little did I know that when seasoned properly with some simple salt and pepper, they were just as delicious. Especially when cheese is involved.


These were a great substitute for fries and actually took about the same amount of time to make.

I whipped up a quick yogurt dipping sauce to bump up the protein, too,


Cheesy Sweet Potato Crisps

from Epicurious

1 pound sweet potatoes, peeled

2 egg whites

1/2 cup romano cheese

1 teaspoon rosemary

1/4 teaspoon pepper

Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray.

Grate sweet potatoes (I used a food processor) and squeeze all the moisture from them. I did this for a good 5 minutes – I find it makes them crisp up better in the oven.

Add sweet potatoes, egg whites, cheese, pepper, and rosemary in a large bowl and mix until combined. Scoop out 1 tablespoon of potato mixture (I used an ice-cream scooper) and set on wire rack. Press as thin as possible. Repeat until potatoes are gone.

Bake for 20-30 minutes, or until potatoes and dark around the edges and crispy.

Serve with smokey yogurt dip.


Smokey Yogurt Dip

1 cup plain greek yogurt

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon cumin

Mix all ingredients together in a bowl. Serve as dipping sauce.



Mr. How Sweet didn’t get any.

He fell into one of those deep, grouchy sleeps the minute he got home from work, and slept through the shredding of the sweet potatoes and the cheesy scent that wafted through the air.

He also slept through me munching away on these. Before I knew it, they were gone.

When he sees this, he isn’t going to be a happy camper.

hmmm how come when I try baking potato latkes they never get that crispy? Maybe cheese is the answer, duh!

i have never tried greek yogurt as savory dip! I always think of it is a sweet type of thing, but I LOVE the sounds of this dip! cumin is one of my FAVORITE spices!! this looks so good!! being jewish, I can call them sweet potato Latkes :)

Oh my goodness, Jessica, that is freaking out of the world amazing!!!! God that looks SO good! I am a HUGE fan of sweet potatoes, too. I actually just went to a fast food place, that had sweet potato BALLS as the side dish instead of the fries. Now I wish they had these, too!

I think its hilarious that your husband didnt get any. Thats exactly the type of thing that happens in my house. I’ll make something and know full well my boyfriend will love it, but if he isnt there, I cant guarantee I’ll be able to save it for him!

Nope! The original recipe actually didn’t call for a wire rack. I just used one anyway, hoping it made them crispier. :)

made these last night and they are awesome! so cool how many crisps you get out of one large sweet potato!!! I felt like I was eating a ton but then was pleased when I remembered I was splitting one large potato with my boyfriend. la la la! these were great thank you How Sweet!

Just wanted to let you know that the more orange fruits and vegetables you eat the less likely you are to sunburn. Instead you tan. Also keeps skin cancer at bay. It’s better than sunblock that’s loaded with chemicals and it also allows you to get your vitamin D fix as well which also wards off many cancers and disorders. It’s a win-win proposition!!!! Fix me up a plate of those!!!

My husband and I made these tonight and they didn’t stick together very well so we couldn’t put them on a wire rack. I wonder where we went wrong? Maybe we used too much sweet potato?? We had a lot of sweet potatoes on hand so we were only guessing how many to use in this recipe to make it 1 pound… so we used 2 of them. The romano cheese is supposed to be the kind in a carton, right? Not the grated kind?

Oh and you said to get them as thin as possible so I got them squished down to almost as thin as a potato chip… maybe too thin? I want to try them again sometime because even though the first batch fell apart and the 2nd batch burned to a crisp, they had the best flavor!! : )

Hi Pamela! It definitely could have been the culprit of too many sweet potatoes. I weigh mine on a kitchen scale once grated. If that happens again, you could always try adding a little more egg white for them to stick together? All potatoes have a different starch level so you may need to play around a little bit and add just less than one pound, see how they are, and add more if needed. And yes, the romano in a carton!

I’m with Pamela! I tried this last night and didnt work out in my favor…. I figure acouple of things could have gone wrong. I put my potatoes in a food processor, and they weren’t necessarily “grated” but more like speckles, like in Romano cheese. That could be the first problem… thus making it difficult to squeeze the water our (potential problem #2). I didnt know the weight, so I used 2 potatoes and they hardly stuck together… I added 1 more egg white. I still put them on a wire rack, if I pressed too thin, they would have fell apart… no dice!
HELP!?
I did however make your crunchy chicken tenders… to die for! a nice change of pace from my normal chicken cutlets… soo good and so crunch! YUM!

well i just made these things and was QUITE disappointed with the result
i’m a frequent baker and this never happens to me
they flattened and burned to a crisp
are you sure you didn’t beat the egg whites a little bit before mixing?
because that would explain the poofiness you got.

I agree with the others… I made these and they just fell apart. I didn’t have a wire wrack, so I put them on a WELL-oiled cookie sheet and flipped part-way through baking. My husband told me not to bother trying again. The sauce was the only saving grace.
