Triple Layer Cookies and Cream Crunch Bars.
After last weekend, I had a ton of Oreos to use up. I should mentioned that this was after I baked a second batch of those Oreo-stuffed chocolate chip cookies. Oops.
I might have bought two packages. Oops again.
This may come as a surprise: I don’t really like to eat just plain Oreos. But I really love anything cookies and cream flavored. And I also have I-buy-too-many-things-that-I-don’t-need-syndrome. Now you know all about me.
I’ve already made cupcakes and brownies, but I couldn’t get a crunchy cookies and cream bar out of my mind. Especially since those double fudge Oreo crunch cookies. Lots of Oreos going on here for someone that doesn’t love them, right? After these bars, I might love them a little more.
It’s like the better-than-crack brownies and a bag of Oreos had a love child.
With Mr. How Sweet away, I figured this would be a great treat to make since it was probably something he wouldn’t eat. But I guess I was wrong, because after he came home yesterday he ate half the pan. Sometimes he surprises me.
The pictures say it all – these brownies are rich and chocolaty. And crunchy. And chewy. And lovely.
If you are one of those crazy people who doesn’t love sugary sweet, so-good-your-teeth-hurt desserts, then these probably aren’t for you. I forgive you. Make some of this cake instead.
Triple Layer Cookies and Cream Crunch Bars
makes 9-12 bars
1/2 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2 cups chocolate chips
1/2 cup peanut butter
20 Oreo cookies
Preheat oven to 350.
Butter and flour an 8 x 8 cake pan.
In the bowl of an electric mixer, cream butter and sugar until fluffy. Add eggs one at a time, then add remaining teaspoon of vanilla. Add in cocoa powder and mix until combined. Add flour and salt, mixing well until batter is smooth and comes together. Fold in 1/2 cup chocolate chips.
Spread in the 8 x 8 pan. Sink 9 Oreo cookies into the batter and press gently. Bake for 25-30 minutes. While baking, crush the remaining Oreos in a ziplock bag. When brownies are finished baking, remove from the oven and sprinkle with 1/2 cup chocolate chips and crush Oreos. Place back in the oven for about 2-3 minutes. During this time, melt remaining chocolate chips and peanut butter together. Remove brownies from oven and pour melted chocolate mixture over top, spreading with a spatula. Make sure chocolate gets down into the Oreo crevices, as it is the “glue” that holds the top to the bottom. Refrigerate for 2 hours before serving.
Let brownies sit at room temperature for 15 minutes before cutting. Don’t worry if some of the cookies spill out from the middle or the top cracks – they are still delicious!
If you need me, I’ll be in a sugar coma.

I’m like you – I don’t really eat oreos on their own, but dip them in chocolate, cover them in cookie dough or throw them in a blizzard and I am officially in heaven. Another fabulous recipe!!
I beg of you, please stop the insanity!!!
Please tell me you are entering the Pillsbury Bake-Off?!?!
Didn’t know about it – when is the entry deadline? Don’t you have to use a Pillsbury product??
Yes there is a whole list of products to choose from. The winner gets a million dollars!!!
With three sons in college, I ship off a lot of boxes with homemade goodies. And they share with their friends. One of the friends sent me a link to your oreo/chocolate chip cookies. Hint, hint! Those are on the agenda for today. Love your blog! Then I discover you are right here in the same town! Maybe I’ll see you in the grocery aisles! I’ll be the one with all the Oreos in her cart this morning!
xo Cathy
You’re in Pittsburgh? Awesome!
Is there anything Oreos can’t do? These look amazing.
Holy crap. I’m making this tonight.
oh my mama.
you’re my hero.
Oh my word, these look AMAZING! I think I’ve died and gone to sugar heaven. :)
i know i’m hopping on the band wagon, but crumble that in a bowl, add some milk and BAM. breakfast of champions
I’m seriously considering that tomorrow morning.
Could these get any more indulgent? I don’t think so. They looks so darn good and would truly hit the spot next time a chocolate craving strikes.
oh.my.word. That takes oreos to a whole new level. You might need to provide us a fitness plan after this one!
Just reading this post made my teeth hurt.
Oh. My. God. I was going to make your Double Fudge Oreo Crunch Cookies this weekend, but now I may have to change my plans…thanks for the recipe!
I’m sure you’re willing to trade me those if I do the dishes that are inevitably in the sink ;)
You are so right.
W. O. W.
That is all I can say.
i could use one of these right about now, chocolate heals all things right?
Oh shizzz. This might be one of the best looking things you’ve ever made. And I’m not even an Oreo lover. I think the fact that they’re so jumbled up looking makes them 100x better…like the “good parts” never end. Then again, I think they’re all good parts.
Thanks love!
These look so good, but I think if I bookmark them my waistline will revolt…
You just read my mind cravings girl! I love Oreo anything! This looks like a big pile of happy!
Oh my gosh, I think this is my perfect food! Luckily I got my wisdom teeth out this week and I can’t eat solid food, or these would be making their way in to my belly right now.
If ever there was a post that qualified as food porn, this one is it. Good lord. I just gained all of my WeightWatchers weight back in one and a half minutes.
But that doesn’t mean I’m not going to make these! LOL
Wow, those look amazing!
Whoa! These are intense. I’m super excited to try these. Mmm.
Holy cow these look ridiculous. Ridiculous in a good way that is! I love me some oreos!
HOLY unadulterated sinful cookie bar Jessica! These looks SO AMAZING. The shot of you pouring the chocolate on is seriously delish and mouth watering (and pretty!). Loving your pictures these days! Makes me want to make everything you post about :)
Thank you so much!
Jessica, you are such a bad influence on me. I love it.
I’m dying. But in a good way. That batter. Good lord.
Dang, girl, DANG. The button of my pants just popped off and flew across the room. Amazing!
so glad I gave up sugar for lent. NOT.
You gotta tell me what the first sugary thing you have on Easter is!
oh my GOD! Those look heavenly!!! I might need to take out the mu-mu, not the stretchies!!
you’re killing me. i think i need to unfollow you, you are so bad for my diet. (don’t worry i won’t, i will just punish myself at the gym more. or go hungry all day just so i can bake later).
It may be 9AM, but these are calling my name! What a great dessert, Jessica. Thanks for sharing!
My favorite desserts include oreos..this looks amazing!!
Wow. Wow. Wow. These look incredible!
I just recently started a Word document of blog recipes that I would like to try, and so many of yours are on there! This one will definitely be added to the list!
Thanks! Let me know which ones you try!
These look AMAZING! Once again you did it, Genius Jessica! :-) Hey, it rhymes. You are very creative to pushing the buttons on these treats. If I made these bars for my nieces they would be in heaven. :-) Thanks.
I guess I better make these tonight, then. I can’t wait!!!
I am trying to cut back on buying things to really don’t need but now I think I NEED to go buy some Oreos :).
I think you do too.
I just figured out what I am going to do with my leftover peanut butter chips. But now I am going to need some Oreos. Then I am going to have to figure out what to do with the leftover Oreos, it’s a vicious cycle :)
Trust me, I know!
Wow! I am seriously salivating. And this is just perfect timing because I have so many Oreos left over from making a cheesecake. I totally agree that cooking with Oreos (a la cookies and cream) is wayyy better than eating them alone.
This is unreal. All I could say while reading the post was “oh my”. Not to mention your other Oreo treats. I am going to have to stay out of the cookie section when I go to the grocery store today because with my luck, Publix will be having a bogo and I’ll buy 4 bags. Then it’ll be over. I’m having a sugar coma just looking at them. I want one…now.
you are not helping out with the last week of my pregnancy!! they are going to have to roll me to the hospital!!!! glad i have been staying active at the same time though while baking all of your goodies!!!!
Live it up!! And congrats. :)
definitely making these asap.
btw last night i had to use up the last of my cake mix (after making ice cream a few times plus your pancakes!) and I made cake mix blondies. INCREDIBLE.
YUM!!!!
Anything with chocolate and peanut butter I am in! They look delicious….now I have to decide next time I make brownies between these and the better than crack brownies that look sooooo good! Keep the amazing recipes coming!!
Oh man, I don’t even know how you could choose!
Holy Moly. I want to come to your house and help you eat these today.
How fun would that be?
Pure insanity. Pure genious.
Oh man, I don’t know how you do it. Your creations always look amazing. Do you give these treats away to neighbors, friends, etc? I’d be about 20lbs heavier if I made these things. Whew! Boyfriends help. Mine eats about 3/4 of whatever I bake.
I try to bake the sweet stuff when we have parties to go to or are entertaining – there is more about this in my FAQs!
Oh my word are these incredible! It’s not fair that I don’t have a couple to snack on now. Just gorgeous photos!!
Thanks Lora!
You’re ridiculous, this is amazing. Totally making these this weekend, I am scared about homemade brownies though, never had a good feel about those, more of a boxed brownies kinda girl. :)
You can use a box mix with this recipe!
Just made it with boxed cake mix, and 1 egg, 1/3 cup of water and 1/4 cup of oil! Scary good!
ommgshhhh this is insane jess!! I ONLY like the cookies in the oreos. not the cream haha. it looks so purtyyyy toooo. you could definitely sell these! people would love them I bet, and presentation is great. at first when i saw the 1st picture I thought it was gelato with studded oreos :P
These look absolutely incredible!
