Crispy Shrimp Sandwiches.
I want to bake you cookies.
Well, really… I want to make you a sandwich. Like… this one. Then bake you cookies. Maybe like a picnic type thing? We can drink Coke out of glass bottles with pretty red and white straws and watch ants crawl on our legs. I’ve never even been on a picnic. Don’t you feel bad now? No joke when I tell you I live in a bubble. Someone get me a blanket, a basket and a plane ticket to Greece. That should pop it.
But I don’t think we can take this sandwich on our picnic. This sandwich should be made and promptly eaten, if for no other reason than you’ll look really ridiculous with drool dripping down your chin. And for someone who doesn’t like mayo (me… and likely you), I’m pretty sure you will like this. It’s filled with cheese after all. And green stuff that will make you feel healthy.
I thought maybe I’d grown out of my crispy shrimp phase when it had been 3 whole days since I’d eaten those tacos, but then I found these personal ciabatta sandwich rolls at my grocery store and they said… “stuff some crispy shrimp into my fat, fluffy rolls please. Please. Do it now!” Seriously. I do what I’m told.
Then I listened to Pumped Up Kicks 34 times and danced in my kitchen trying to figure out the words. The first 12 times I sang “pumped up kiss” then the next 22 changed it to “pumped up kids.” Thank God for google.
And lunch.
If you’re feeling frisky you can use whatever bread you have on hand or do something whacked like make this into pasta. Or maybe even serve it on a salad, but honestly – why would you want to do that?! Don’t ruin it.
And you might not want to wear a bikini on our picnic because… I totally fried these shrimps in bacon grease. BEST SHRIMPS EVER. It’s like a shrimp BLT, but better. Times a million.
Ingredients:
Crispy Shrimp Sandwiches
- 1 pound of peeled and deveined raw shrimp
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 3 slices bacon
- 1/2 avocado, chopped
- lettuce for garnish (I used butter lettuce)
- 4 sandwich rolls/breads/buns of choice, preferably toasted
Parmesan Tarragon Mayonnaise
- 1/2 cup mayonnaise
- 2 tablespoons finely grated parmesan cheese
- 2 tablespoons freshly chopped tarragon
Directions:
Crispy Shrimp Sandwiches
Combine flour, paprika, garlic and chili powder in a large bowl and mix. Set aside.
Heat a large skillet over medium-high heat. Once hot, add bacon and cook until fat is rendered and bacon is golden and crispy. Remove and let drain on a paper towel. Do not turn off heat.
Quickly salt and pepper the shrimp, the toss in the flour mixture (I actually “tossed” mine and this went much quicker and just as successful as dredging it). Working in batches, add shrimp to the skillet and cook until golden on each side, about 2-3 minutes per side. Remove and let drain on a paper towel.
Combine shrimp, avocado and crumble the bacon into a bowl and lightly mix to create a sticky “salad” of sorts. Spread bread of your choice with parmesan mayo, garnish with lettuce, then stack on the shrimp. Serve with a fork and fruit on the side.
Parmesan Tarragon Mayonnaise
Add all ingredients to a bowl and mix thoroughly. Spread on sandwiches. Can be refrigerated for up to 5 days in an air-tight container.

That’s like the prettiest sandwich ever.
The funny thing about all of your recipes that I comment on is they look so so good – even though I know I would never eat the meat. But for real, that looks amazing. And sometimes you make me wish I wasn’t a vegetarian (not really, but sort of).
I don’t think there are too many things you could fry in bacon grease and not love. I think the avocado and mayo combo looks amazing.
Bacon avocado & shrimp are my boyfriend’s favorite combo! The quesadillas you made with these ingredients looked great, but these sandwiches MIGHT just take the cake

This reminds me of the shrimp po-boys I used to eat growing up on the Gulf Coast. Crispy shrimp on a roll is one of life’s simple pleasures. Delish!

I’m not a huge shrimp fan, but these sandwiches look amazing. I’m totally head over heels in love with every other ingredient…and shrimp fried in bacon grease? Might just be worth trying!

Maybe these foods/ideas/methods/techniques that i’ve been terrified of my entire life are really just about “getting it done” and doing it.

and i will tell you – i am prone to kitchen fires. And/Or burning whatever creation I am trying to master.
So. in other words. When my grandparents take me grocery shopping this weekend (did i mention they are visiting from Tennessee and are completely spoiling me? Yeah. it’s true.) I am going to pick up these ingredients. Then, at some point, I’m going to make these sandwiches for my pescitarian friends and I.
In other words, again: please be on standby via text message for when the following occurs (because you know it will):
a) I cant find something in the grocery store and I need your help tracking it down. [see: that time I couldnt find old bay for the life of me.
b) I need your suggestion on a substitution, as i’ve already been to the grocery store three times to pick up things i forgot, and still managed to not pick up some sort of necessary evil. [see: every time i bake anything and you receive some sort of paniced text at 11:15 PM]
c) I burn down my apartment and am running away to the Burgh. I will need you to employ me. I like doing dishes. And making lists. And keeping you entertained while you cook and drool over shoes.

Am I the only one who is afraid of avocado? I must be since it’s all over the place. Don’t know why, maybe it’s because I never ate it as a kid… and it looks kind of weird… and it is shaped funky… and it is green… and a vegetable? Ha ha

My husband doesn’t like it either! It is so good though. I suggest trying it first on a BLT. SO amazing. I think the key is seasoning it a bit too – salt and pepper!

Today’s one of those rare days where I’m on my own for lunch, so since the hubby hates fish, I’d been thinking about grabbing sushi… until this sammich came up and ruined my plan! It’s okay – it has everything I would have eaten in my crunchy dragon roll anyways, minus the rice, plus the bread (which is really just swapping carbs, right?) and lettuce (which makes it healthy!!!)
