Crispy Shrimp Sandwiches.
I want to bake you cookies.
Well, really… I want to make you a sandwich. Like… this one. Then bake you cookies. Maybe like a picnic type thing? We can drink Coke out of glass bottles with pretty red and white straws and watch ants crawl on our legs. I’ve never even been on a picnic. Don’t you feel bad now? No joke when I tell you I live in a bubble. Someone get me a blanket, a basket and a plane ticket to Greece. That should pop it.
But I don’t think we can take this sandwich on our picnic. This sandwich should be made and promptly eaten, if for no other reason than you’ll look really ridiculous with drool dripping down your chin. And for someone who doesn’t like mayo (me… and likely you), I’m pretty sure you will like this. It’s filled with cheese after all. And green stuff that will make you feel healthy.
I thought maybe I’d grown out of my crispy shrimp phase when it had been 3 whole days since I’d eaten those tacos, but then I found these personal ciabatta sandwich rolls at my grocery store and they said… “stuff some crispy shrimp into my fat, fluffy rolls please. Please. Do it now!” Seriously. I do what I’m told.
Then I listened to Pumped Up Kicks 34 times and danced in my kitchen trying to figure out the words. The first 12 times I sang “pumped up kiss” then the next 22 changed it to “pumped up kids.” Thank God for google.
If you’re feeling frisky you can use whatever bread you have on hand or do something whacked like make this into pasta. Or maybe even serve it on a salad, but honestly – why would you want to do that?! Don’t ruin it.
And you might not want to wear a bikini on our picnic because… I totally fried these shrimps in bacon grease. BEST SHRIMPS EVER. It’s like a shrimp BLT, but better. Times a million.
Crispy Shrimp Sandwiches
- 1 pound of peeled and deveined raw shrimp
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 3 slices bacon
- 1/2 avocado, chopped
- lettuce for garnish (I used butter lettuce)
- 4 sandwich rolls/breads/buns of choice, preferably toasted
Parmesan Tarragon Mayonnaise
- 1/2 cup mayonnaise
- 2 tablespoons finely grated parmesan cheese
- 2 tablespoons freshly chopped tarragon
Crispy Shrimp Sandwiches
Combine flour, paprika, garlic and chili powder in a large bowl and mix. Set aside.
Heat a large skillet over medium-high heat. Once hot, add bacon and cook until fat is rendered and bacon is golden and crispy. Remove and let drain on a paper towel. Do not turn off heat.
Quickly salt and pepper the shrimp, the toss in the flour mixture (I actually “tossed” mine and this went much quicker and just as successful as dredging it). Working in batches, add shrimp to the skillet and cook until golden on each side, about 2-3 minutes per side. Remove and let drain on a paper towel.
Combine shrimp, avocado and crumble the bacon into a bowl and lightly mix to create a sticky “salad” of sorts. Spread bread of your choice with parmesan mayo, garnish with lettuce, then stack on the shrimp. Serve with a fork and fruit on the side.
Parmesan Tarragon Mayonnaise
Add all ingredients to a bowl and mix thoroughly. Spread on sandwiches. Can be refrigerated for up to 5 days in an air-tight container.

That’s like the prettiest sandwich ever.
The funny thing about all of your recipes that I comment on is they look so so good – even though I know I would never eat the meat. But for real, that looks amazing. And sometimes you make me wish I wasn’t a vegetarian (not really, but sort of).
I don’t think there are too many things you could fry in bacon grease and not love. I think the avocado and mayo combo looks amazing.
Bacon avocado & shrimp are my boyfriend’s favorite combo! The quesadillas you made with these ingredients looked great, but these sandwiches MIGHT just take the cake
It looks soooooooooooo tasty!!
Bring on the crispy shrimp recipes! I’m FINALLY making the tacos this week, and I bet these sandwiches will follow closely behind.
Let me know how you like the tacos. :)
Crispy shrimp on a sandwich? Sounda fantastic.now, about those cookies
You can make these and cookies for me any time!
I have to google words to songs all the time!!!! YUM!!! Another win for How sweet!
You always seem to be able to make foods I don’t usually like (shrimp) look appealing!
This reminds me of the shrimp po-boys I used to eat growing up on the Gulf Coast. Crispy shrimp on a roll is one of life’s simple pleasures. Delish!
haha i love pumped up kicks! i also listened to it about a squillion times when i first heard it. these sandwiches look SO good!
A squillion… LOL! Totally stealing that word.
you know, bikinis aren’t really my thing anyway…we can wear mumus on our picnic in Greece, right? ;)
It’s like a dolled up shrimp po boy!
I’m a lame RD who can only think about cholesterol right now….but these look delish!
I always trust you. :)
Sigh. It looks so delicious…………..if only I weren’t allergic to shrimp. :(
So sorry. :(
I’m not a huge shrimp fan, but these sandwiches look amazing. I’m totally head over heels in love with every other ingredient…and shrimp fried in bacon grease? Might just be worth trying!
Come to Nashville and we’ll go on a picnic. ;)
it BAFFLES me how you make recipes look so easy. I mean, maybe the are easy.
Maybe these foods/ideas/methods/techniques that i’ve been terrified of my entire life are really just about “getting it done” and doing it.
you explain things so well.
so well, in fact, that I am now considering stepping WAY out side of my comfort zone and making these sandwiches.
i know what you are thinking. you are thinking, “um….heather….what about this is hard?”
and i am thinking, “ummm…..jessica….I don’t like taking a chance on anything with the work “crispy” in the title.”
and i know what you are thinking again….
you are thinking, “um….heather…why!? that’s so lame.”
and i will tell you – i am prone to kitchen fires. And/Or burning whatever creation I am trying to master.
So. in other words. When my grandparents take me grocery shopping this weekend (did i mention they are visiting from Tennessee and are completely spoiling me? Yeah. it’s true.) I am going to pick up these ingredients. Then, at some point, I’m going to make these sandwiches for my pescitarian friends and I.
In other words, again: please be on standby via text message for when the following occurs (because you know it will):
a) I cant find something in the grocery store and I need your help tracking it down. [see: that time I couldnt find old bay for the life of me.
b) I need your suggestion on a substitution, as i’ve already been to the grocery store three times to pick up things i forgot, and still managed to not pick up some sort of necessary evil. [see: every time i bake anything and you receive some sort of paniced text at 11:15 PM]
c) I burn down my apartment and am running away to the Burgh. I will need you to employ me. I like doing dishes. And making lists. And keeping you entertained while you cook and drool over shoes.
also, by “anything with the work “crispy”” – i clearly mean, “anything with the WORD “crispy” ”
maybe you should count on someone else for edits ;)
Can I please come to this picnic? And can we share my earbuds and listen to Pumped Up Kicks the whole entire time? I am even willing to dig under the dirty couch cushions to find my iPod if you agree.
Funny enough, I was listening to Pumped Up Kicks last night and I realized I was singing at least 70% of the words wrong… oops.
Oh and I’m making these for lunch tomorrow.
Shrimp and bacon, I’ll pass but i WILL Take you up on the offer to bake cookies :) YES please!
Parmesan Tarragon Mayonnaise = that is something that I could and would eat by the spoonful. That sounds fabulous. I like a little food with my vat of dip.
I love pumped up kicks! But probably not as much as I will love this sandwich. I just printed 6 recipes to keep me busy on hurricane Sunday.
Ohhh yummy. Maybe all that cooking will scare Irene away.
Jess this looks incredible. I’ve never had shrimp on a sandwich!
That is a gorgeous looking sandwich. If I liked shrimp I would go for one myself!
Am I the only one who is afraid of avocado? I must be since it’s all over the place. Don’t know why, maybe it’s because I never ate it as a kid… and it looks kind of weird… and it is shaped funky… and it is green… and a vegetable? Ha ha
You can bake me cookies though, just don’t make em green. ;)
My husband doesn’t like it either! It is so good though. I suggest trying it first on a BLT. SO amazing. I think the key is seasoning it a bit too – salt and pepper!
Oh you did not just cook shrimp in bacon fat. LOVE IT! I am amazed at what I don’t think of and when someone one does it your like “duh”. I will be having this sandwich this weekend. Thanks!
Totally have tarragon growing in my garden right now. I’ll make the mayo…you make the sandwiches, k?
Lucky! I want fresh tarragon in a garden.
That is totally a classy version of a po’boy! It looks sooooooooo yummy!!! (I’ve been craving po’boys lately, so this might just hit the spot!)
I’ve never had a po’boy that’s probably why I didn’t know that… lol.
Just want to tell you how much I enjoy your blog. Wish you lived next door – we would have so much fun together!
Thanks so much Melanie!
I’m obsessed with shrimp. And I like your whacked suggestion to make this into pasta. I like it alot.
YES! This too!
I am TOTALLY on board for being made this sandwich followed by cookies. I’ll bring the blanket and the wine to this picnic :)
YUMMM! What a great summer sandwich! I can’t get enough of ciabatta bread.
I would not bother with the buns. Slap those bad boys in a bowl and get outta my way!
OMG, that looks insanely delicious.
MmM crispy shrimp.. avocado.. and bacon.. i’m sold! Beautiful sandwich!
Thanks to you I now have drool rolling down my chin. It’s an awesome look for me.
I am on a huge avocado kick lately so will definitely be trying this!
I do trust you. :) I do want one of these. Like, now.
I do want one! I love crispy shrimp!
My jaw literally dropped and my stomach started growling when I saw these pictures and read through the recipe. I am DEFINITELY making this this weekend, I cannot wait!!! Although I’ll probably be one of those people that desecrate it by putting it on a salad…. but that’s only so I can make one of your amazing desserts and not feel too guilty about it when I eat it ALLLLLL :D
I forgive you.
Cause really – who wouldn’t rock out to Pumped Up Kicks over and over again? And sing all the words wrong? And then stuff Crispy Shrimp Sandwiches in their pie-holes? I would. I will. Awesome recipe!
If i say i trust you and find you all the lyrics to the song can i please have this sandwich? Mmmmmmmm
I was going to recreate your salt and vinegar chips fish again but i might have to make this instead!
Ah they are both so good! I don’t know if I could decide.
Did somebody say bacon?? <3 this sandwich!
Oh my my. I think we should plan a picnic this fall. :)
This looks delicious!! Thanks so much for sharing!
LOVE sandwiches like this!!! That mayo sounds amazing!
Today’s one of those rare days where I’m on my own for lunch, so since the hubby hates fish, I’d been thinking about grabbing sushi… until this sammich came up and ruined my plan! It’s okay – it has everything I would have eaten in my crunchy dragon roll anyways, minus the rice, plus the bread (which is really just swapping carbs, right?) and lettuce (which makes it healthy!!!) Thanks for this nummy change-up & for saving me from the ginger slices :) :) :)
Oh, I trust you. And I just went blind. And now I’m dying.
LOOK WHAT YOU DID TO ME.
I’m allergic to shrimp…but I love avocado! Your sandwich recipe sounds & looks SO delicious, though, maybe I can risk the swollen face. :-)
