Loaded Baked Sweet Potato Soup.

Oh… hey there. Loaded baked sweet potato soup coming right at you!
You know that potato soup that you love so much? The one made with glugs upon glugs of heavy cream and cheese, only to be garnished with more cheese, crunchy bacon and green onions? At least you got some vegetables there.
Yeah. Well, I love that soup. Like, L.O.V.E. that soup. I want to eat it every freaking day. Wait… does someone out there not like that soup? Because if that’s the case, I really don’t know how much longer we can continue this relationship.
So.
I made a version with sweet potatoes. Clearly. I don’t know why I act like I have to spell everything out for you. I think you’re pretty smart.
My “loaded” idea of sweet potato soup comes bearing a dollop of mascarpone, crumbled goat cheese, crispy, caramely shallots and obviously… bacon.
Duh. It’s not like I was abducted by aliens or anything.
But the actual soup itself is fairly heathy, Â which always means one thing… more room for toppings! Did you expect anything less of me? I think not.
Loaded Baked Sweet Potato Soup
Ingredients
- 3 large sweet potatoes, peeled and cubed (I had 2lbs total after peeling and cubing)
- 2 tablespoons butter
- 1 1/2 tablespoons flour
- 1/2 sweet onion, diced (about 1/2 cup chopped)
- 2 garlic cloves, minced
- 2 1/2-3 cups low-sodium vegetable stock
- 1 1/2-2 cups low-sodium chicken stock
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon smoked paprika
- for garnishes: bacon, mascarpone cheese, crumbled goat cheese & crispy shallots
Instructions
- Prepare potatoes: peel and cube sweet potatoes, then add to a microwave safe bowl. Microwave on high power for about 10 minutes or until fork tender, tossing 2 to 3 times during cook time. If you do not want to use the microwave, throw the potatoes on a baking sheet with a drizzle of olive oil, salt and pepper (you can omit/add less salt and pepper later if this is the case) and roast at 400 degrees for about 35 minutes. Using the microwave will help this soup come together in 30 minutes. Roasting the sweet potatoes adds a bit more "caramely," deep flavor.
- Heat a large pot over medium-high heat. Add butter and diced onions and cook for 5 minutes. Stir in garlic and cook for 1 minute more, then add flour and whisk continuously to create a roux with the onions. Cook the onion roux for about 2 to 3 minutes, until it starts to golden in color a bit and smell nutty. Add in stock, milk, smoked paprika and potatoes, then bring to a boil. Simmer for 15 to 20 minutes over medium heat, stirring often - especially scraping the bottom. The potatoes will begin to bread down at this time - if they are not as broken down as you'd like, mash a bit more with a fork. Turn heat down to low and add salt and pepper. Taste and adjust seasonings according to preference. If you'd prefer a thinner soup, add more stock to thin it out. You can also throw the soup in the blender to make it super creamy.
- Serve hot with garnishes of crumbled bacon, mascarpone cheese, goat cheese, and crisped shallots.
- Note: to crisp the shallots, I sliced 2 whole shallots very thinly, add a little canola oil over medium-high heat, and once hot added the shallots. I cooked them for about 2 minutes, then removed with a slotted spoon and let drain on a paper towel. So good.

Nope I actually fried this bacon… but it depends, occasionally I do bake it for ease – just depends on what’s going on in my kitchen at the moment.
I think the pics of this might be prettier than some of the ones of the apple crumble from yesterday! No matter, though, because both recipes sound delicious & are properly festive for fall. Everything about fall foods makes me happy!

I ended up making this for hubby and I- and we LOVED it. Ok- I loved it, he liked it. Admitting that he actually even likes anything made of vegetables is BIG. I pureed it and topped with bacon crumbles. Thanks for a recipe I know I’ll make again! Easy on the wallet, too.

Oh my goodness. This recipe looks incredible, even if the dish isn’t all that pretty. But sometimes, the least pretty dishes are the ones that are the most delicious, and I bet this falls into that category. I cannot wait to try this!

This looks so delicious. I love baked potato soup, and I love sweet potatoes even more… but I don’t think I would’ve ever thought to combine the two! This is definitely on my “to-make” list.

Can you share with me tips as to how to cut a sweet potato? I’ve fought them. I’ve bought and bent a fry cutter. I’ve cut myself. Mr. Burgher has cut himself. I love, love, love sweet potatoes and this soup is making me so hungry (it’s the bacon that’s calling my name, let’s be for real). How can I do this without going crazy?

I just made this recipe and mine is so much thinner than the picture. I added the right amount of chicken and vegetable stock.. It still tastes great though!
Made this last night for dinner. It was delicious! I baked the potatoes first and then added them to the pot. I thought baking them would add a “sweeter” flavor, but that wasn’t the case. Next time I’ll just go ahead and boil them. This soup was super creamy and flavorful. We didn’t use any toppings…just pureed the soup and enjoyed with some crackers.
i’ve never commented on here before, but i made this for the second time this weekend, and it is hands-down my favorite. soup. ever. i can’t get enough of it. i’m secretly thrilled that my husband doesn’t love sweet potatoes so he’s not interested in more than a taste of this soup. i can’t think of many things i’d want to eat for lunch four days in a row, but i’m already sad about this batch being finished. i swirled in some greek yogurt and goat cheese and put shallots on top. amazing. thank you.
