Homemade Snickers Bars.
That’s what this is. Pure In.San.It.TEEEEE.
You know those days when you’re in desperate need of sugar and you’ve already downed more gummy vitamins than recommended while seriously considering how many more you can ingest without causing severe harm to your internal organs? They’re just so gooooood.
Well… in that case you should make some homemade snickers bars. Because I definitely did that.
And I KNOW you know what I’m talking about.
I spent the majority of my pre-pubescent and adolescent years scheming just how I would be able to steal my brothers’ Halloween candy. Snickers were always my favorite, and the boys weren’t huge fans so more often than not, they would hand them over. But sometimes… they kept them just to spite me. Brats.
Then I went through a SERIOUS phase of those Snickers ice cream bars. I swear they only had like 4 in a package or something but I could easily take down 2 for dessert. As kids, we were rarely allowed candy bars, but my mom had no issue with buying bags of fun-sized candy because, well… when things are fun-sized it means the calories don’t count.
And that you can eat a million of them.
These days, it’s rare that I crave actual candy, often preferring some chewy cookies or super rich cheesecake or a bar of amazing chocolate that costs thrice as much as the recent organic meyer lemons I purchased. But snickers are in my blood.
They are the peanut butter to my jelly.
The salt to my pepper.
The broccoli to my… wait, no.
This recipes comes from my friend Nikki who, well… I didn’t even know until Instagram and Twitter.
But now Nikki is like my bestest friend ever. Because when someone emails you a recipe for homemade snickers bars, they are your BFF for life. I mean, who else has my best interests at heart like that? I don’t even know.
And the fabulous part? This is SO EASY. So, so, so, so, so easy. Like, had-five-drinks-and-a-recent-breakup-easy. It has four distinct steps and in print seems slightly intimidating, but it isn’t whatsoever. I promise. I swear. I even had every single ingredient on hand. And not just because I’m a hoarder. Would I lie to you?
I’m not even going to waste your time trying to convince you to whip up a batch because, uhhh…. look at them. They are irresistible. Literally… considering they ruined two of my family members’ January diets.
Now that’s a win.

I appreciate you so much!
makes one 9×13 pan
bottom chocolate layer
1 1/4 cups milk chocolate chips
1/4 cup peanut butter
Thoroughly grease you baking pan. Melt ingredients together in a saucepan or microwave, then pour into the baking dish and spread until even. Let cool and harden completely.
nougat layer
1/4 cup unsalted butter
1 cup granulated sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow fluff
1/4 cup peanut butter
1 1/2 cup salted peanuts chopped, roughly chopped
1 tsp vanilla extract
Melt butter in a saucepan over medium heat. Add in sugar and milk, stirring until dissolved and bring to a boil. Let cook for 5 minutes, stirring occasionally. Add in fluff, peanut butter and vanilla, stirring until smooth. Turn off heat and fold in peanuts, then pour over bottom chocolate layer. Let cool completely.
caramel layer
1 14-ounce bag of caramels
1/4 cup whipping cream
Combine ingredients in a saucepan over low heat. Let melt, stirring occasionally, until smooth – this took about 10 minutes for me. Pour over nougat layer and let cool completely.
Top chocolate layer
1 1/4 cups milk chocolate chips
1/4 cup peanut butter
Melt ingredients together in a saucepan or microwave, then pour over caramel and spread until even. Let cool and harden completely.
Refrigerate for at least one hour before serving, then cut as desired. These can stay at room temperature, but they do get gooey. I like them refrigerated best!
Note: for best results, buy one of the half-sheet aluminum cake pans at the grocery store. That way, you can pop the entire square out and cut from there!
I can’t even take that.

Ohhhh infinite yum! Great job! You could go the extra step and dip the whole pieces in chocolate too if you want it to be more candybar-like :)
Hoooly cow. You should be knighted. Or whatever they do for women. I mean it. I’m not on a diet right now, but I have a strong feeling that any future diets are doomed now that I know these exist.
you said what I am thinking!
You have a way with words, Becca! I can’t wait to try these!
Recipe
Whoa. This is just so divine. I can’t get the image of the snickers stack and that caramel string hanging down…MMM
want to try these
These look amazing, making a special trip to the grocery store so I can make them immediately…for my kids, of course.
Oh my goodness… I’m loving these and also kind of wishing I hadn’t seen this at all, since I don’t want to buy a whole new wardrobe. :)
II had no idea where to email you but are you aware trader joe’s sells cookie butter??? Its called speculoo and id love to see some recipes from you!! :D
Oh yes, already gone through my fair share! However, did you just recently find it? I haven’t been able to find it since November. Everywhere has been sold out.
ok, What the hell is cookie butter, is it actually butter that tastes like cookies? and where can I get some?????? I dont have a trader Joe’s around here! My head was already about to explode from the homemade snickers and now I hear about cookie butter?? I may never recover!
There’s the same exact thing with a different name it’s called “biscoff spread”….I fell in love with speculoos after my brother brought it back in mass amounts from Belgium…turns out you can get it right at the grocery store it just has a different name!
OMG – making these asap…looks like it will have a long train of “adapted from….” :) Thanks for sharing (Nikki, Taste of Home, and you!)
woah.
For the LOVE of god!!!
Can we “pin” things off your blog?
great photos (as always) Jess.
These truly look good enough to break the office diet over. They will yell, they will scream, they might even throw things at me… but, I bet they all will try them.. I am totally going to be the saboteur (and thus not being the only one to gain this week!)
Thanksomuch!
Thanks Dianna!
Oh. my. goodness.
And yes, I know EXACTLY what you mean about those damn gummy vitamins!
I am drooling right now! Melty, chewy caramel gets me every time :)
“You know those days when you’re in desperate need of sugar and you’ve already downed more gummy vitamins than recommended while seriously considering how many more you can ingest without causing severe harm to your internal organs? ”
I nearly spit out my water when I read that, I thought it was just me! Why must they be so tasty?
The bars look amazing…and addictive!
Oh it’s not just you. I pop those things like candy.
could this BE more amazing??!?
Oh dear God…I’m going to be fat soon :)
These pictures are soooo gorgeous, Jessica! You rock. Fun fact: I have a mild peanut allergy, and a raging peanut butter addiction. I know exactly how much of any of my favorite things I can eat before I start getting ill. Know how often I stop at the stopping point? Never.
Oh man… that has to be so tough!!
This looks delicious, but for those of us with more serious peanut allergies, can you think of a good substitute? Maybe Nutella for the peanut butter and hazelnuts for the peanuts? Or Biscoff cookie spread and pecans or walnuts? It would be so exciting to actually get to approximate the Snickers bar experience. Grrr. . .stupid allergy! Why couldn’t I break out in hives after eating broccoli or something?
I definitely think nutella or cookie butter of whatever your favorite peanut-free nut butter is would work. I really don’t think you even need it in the top and bottom layers, but you probably definitely want it in the nougat layer.
Why would you make a snickers without peanuts?
If it has no peanuts, then isn’t a snickers!
Go make a mars or an almond joy or any other chocolate bar that haven’t got peanuts as default.
There are tons of reciepies on the net.
I’m sorry – I honestly didn’t mean to engage in any BSing! I really do have a serious peanut allergy, so I’ve never had a Snickers bar. Your reaction kind of makes my point, though. People get very passionate about Snickers, and I’ve always been a bit curious about why. So, when I saw this recipe, I thought it might be a good opportunity to get some insight. And I figure even a modified version of a How Sweet It Is recipe will be better than almost anything else online! I did end up making these with almonds and almond butter, and while I have no idea if the results tasted like a Snickers, I can say they were absolutely amazing. Totally worth the $8 jar of almond butter. So thanks a ton, Jessica!
These look fantastic!! And I LOVE Snickers ice cream bars. I had them for the first time back in high school and they’ve remained one of my favorites.
wow these look amazing! We don’t have marshmallow fluff in New Zealand – do you think melted marshmallows would work ok as a substitute?
Regular marshmallows definitely work won’t because they will harden up, but here is a recipe for homemade fluff: http://www.bonappetit.com/recipes/2011/08/homemade-marshmallow-creme
ooo thank you, will give that a try!
WOW!! just WOW!!
Oh good grief!! This would certainly be the death of me! I would eat them ALL if I made them – they are my absolute favoritest candy bar evah!!!!
Great, and I see this just as I’m craving chocolate…and a Margarita. Weird.
I guess I’ll go to the store now.
get outta here. snickers are my favorite, too. that and twix, actually. it’s a toss up. but snickers ice cream bars were my JAM. marshall and i gave up candy for the year. can i still make these?
Ummm YES… because it’s HOMEMADE candy. Not store bought junk. I will gladly make all decisions for you in the future.
Perfect. I knew I could count on you.
First of all, these look amazing! I was just wondering if a silcone pan would work for making these. I’ve actually never used any silicone baking pans, but just a thought. I am guessing with the aluminum pan it works because you can bend the pan to push them out.
Actually I bet that it would! That’s a great idea. I can’t say for sure but I have a feeling it would.
OK…… as if the first few pics weren’t already calling my name, the next to last one, with that angle and THE ACTUAL BITE MARKS ON IT!!!!!!! Taunting, but in a sick, beautiful way.
Gotta go make these homemade snickers bars!
i L.O.V.E. snickers :) I’ll have to try this recipe. I’m taking your word for it, that’s its easier than it sounds because I am not a cook. haha.
Insanity is right, my friend. This is my new love.
Pretty much every time I come to your blog, I think to myself, is she freaking serious?
Of course she is. That’s what makes her awesome.
I used to eat two regular size snickers each and every day. I loved them. Then I gave them up for a year and when I tried them again I didn’t really care for them. It has been so long since I had one that while reading this all I could think was…. Snickers don’t have nougat! I had to go check the snickers site and well…. They sure do. I am so out of the snickers loop. Maybe the homemade version would be good though.
Wow these look a-m-a-zing!!!!
STOP! That is ridiculous. The caramel. The nougat.
Do you think it’ll be ok without unsalted butter and just using regular butter? I want to make these TONIGHT! :)
Yes definitely!
Snickers are by far my favorite candy bar! And I would devour a Giant ice cream bar after lunch at least 3 days a week, at school.
These will most definitely be gracing my fridge very soon. :-P
cant wait to try this! any thoughts on how to recreate this snickers pie from sweet street – (using store bought or homemade snickers)? http://www.sweetstreet.com/store/product.aspx?productId=The%20Big%20Blitz%20w/%20Snickers%20Bar
I actually held my breath while reading the ingredient lists…. because I knew if I had everything, I would get no work done because I’d be in the kitchen making these. Bittersweet.
I think if I made these my husband would marry me all over again. Damn these look good. Thanks for sharing.
Holy crap. These look so amazing. Gotta try them asap.
you have GOT to be kidding me! Those look incredible!!!!!!
Oh no – there goes the diet!
oh. my. gosh. 8o}
Hm. I’ll have to utilize this recipe as a source of inspiration. I’ve been commissioned to create a Snickers cake for an upcoming birthday.
Actually, I should probably make both as a guideline. You know, chomp on a few homemade bars in the cake baking process to ensure that its flavor is spot on for my adoring brother.
God, I’m so selfless.
And your timing is a thing of beauty.
Do you think a can of Dulce de Leche might be a proper substitute for the caramels and whipping cream? I hate taking shortcuts, but I’ve had a can of the stuff in my cupboard for far too long. I need to put it to good use before its contents end up on a spoon headed toward my mouth.
Hmmmm I can’t be sure, but I want to say no – I think it might be a bit too runny?
Girl you make dieting SO hard!
Thank God I’m not the only one that has that thought about the gummy vitamins!!
Oh my goodness! This is probably the most tempting thing I’ve seen on a blog in a while! I feel the same way about Snickers. I always crave Snickers. This recipe SO good and SO bad at the same time! But I thank you for the temptation! So glad to have found your blog! :) :)
I think your trying to kill my January diet!!!!
I love your blog. And I love that recipe! Oh. My. Gosh. Those look absolutely amazing! I cannot wait to make those!
I had more fun reading the comments than the recipe – though that had me laughing too! I guess I’ll have to try these once my new food plan is a little more stable so I’ll be able to ‘just eat one”! :)
