No Bake Peanut Butter S’mores Squares.
This is simply a rework of those peanut butter marshmallow squares that I shared a few weeks ago, just trashed up with some chocolate and graham crackers since I’m a s’mores fanatic. Nothing new, nothing too exciting, nothing insanely creative. Big fat cheater, yes I am.
Oh, and um… those squares? Like every single one of you have been eating them all your life, leaving me to feel extremely deprived. My childhood was freakishly missing out. I’m completely looney toons. Did no one love me enough to feed me melted peanut butter and marshmallows? Waaaaah.
But all this whining can’t even compete with how scrumptious these little squares are. They have SO MUCH texture. And they are like, the easiest things in the world to make, and you don’t even need to turn on the oven in the crazy summer heat. Seriously, who wants to heat up their house when it’s 95 degrees outside? Uh… check please. No additional heat here.
I turn into a MON.STER.
So THIS is how I really wanted to make the squares the first time around. Super s’more-sie and absolutely huge. I mean, you can barely open your mouth up wide enough to take a bite. So wrong… and so totally right.
No Bake Peanut Butter S’mores Squares
[adapted from the peanut butter marshmallow squares]
makes one 9×13 pan
2 cups creamy peanut butter
1/2 cup unsalted butter
1 1/2 (11-ounce) bags of chocolate chips
2 10.5-ounce bags mini marshmallows
1 sleeve of graham crackers, coarsely chopped and crushed
Heat a large pot over low heat and add peanut butter, butter and 1 bag of chocolate chips. Constantly stir until totally melted – this will take about 10 minutes, but eventually everything will melt. Remove from heat and set aside to cool for about 15-20 more minutes. I find this works when the mixture is really completely cool, but not solid.
Fold in marshmallows, graham crackers and remaining chocolate chis until evenly coated and distributed – some of it may melt, and that’s fine. Spray a 9×13 pan with nonstick spray, then spread mixture in the pan. Let sit at room temperature for a few hours to firm up, or place in the fridge. Note: mine are a bit thicker because I used a 11×6 pan.

Love the addition of peanut butter. I have a similar recipe from my mom that uses Golden Grahams cereal and a little corn syrup. Always a big hit when I take it anywhere! Remarkably, I’ve never thought to use ACTUAL graham crackers!
I’ve made similar (no PB) with Golden Grahams. Easier than messing with graham cracker bits and super tasty.
No-bake desserts are so awesome during the summer – keep the kitchen nice and cool. I love s’mores! My fave!

Hey, I just got a new phone (no this is not a commercial)–Droid Razr Maxx. It has an application on there that links up with my bluetooth (have a speaker one in the car). I can always find my car! It tells me where my car is so I never have to freak out and try to remember where I parked it in huge parking lots. Saves my nerves and adds a few more years to my life. Perhaps your cell phone can do the same thing. Oh, and I am very cell phone challenged and it was VERY easy to set up!

I dare you to use giant marshmallows instead. They are a lot more luscious and epic that way.
Or replace the graham crackers and peanut butter with walnuts to make old fashion Rocky Road like my Great Aunt taught me to make in her San Francisco candy store.

I saw this recipe and I knew my life wouldn’t be complete until I made them! So make them I did. SO DELICIOUS! I used chunky pb as that is what I had and cause I was feeling dangerous threw in some rice krispies. If that is wrong I don’t wanna be right. Thanks for the great recipe! Love you site :)
For those of us living outside the US and who need to substitute or make our own graham crackers (yes, it’s been done…) exactly how much IS 1 sleeve of graham crackers anyway?

Just spent a week making microwave s’mores in a bag at VBS for the food shelf. I’ve got a gallon bag of broken graham crackers and chocolate bars….now I know what I’m going to make! Awesome! :)

Whoa! This recipe has a lot of ingredients!!1 I didn’t notice until the butter, pb and chocolate were melting in the pan. With only one bag of marshmallows, I had to improvise, hope they turn out!! I am sure even a crumbly mess will still taste good! Thanks!!

I made these the other night and learned a few lessons (1) Don’t try to cut up big marshmallows to substitute mini marshmallows [unless the intent is to melt them]. (2) Don’t live in such a humid place where graham crackers, although packaged, get so soft. My graham crackers soaked up all of the peanut butter and chocolate. However, although they didn’t look great like yours, I have a feeling they tasted the same because they were AMAZING.
