Crispy Bacon Waffles with Bourbon Butter and Blueberry Syrup.
So many Bs.
And in a good way. The good kind of Bs. Bacon! Blueberries! Bourbon!
I wouldn’t mind being a B if I could be one of these.
I’m in a waffle mood right now. And by mood, I guess I mean phase. I’m really into waffles, especially when covered with tons of fresh fruit. Like a big, old rainbow for breakfast. I’m into it.
BUT.
My waffles have to be crispy. Like really crispy.
And.
Let me tell you something: Eddie likes soft, soggy waffles.
Seriously.
What? Do you comprehend this? I do not. Does anyone else in the universe like soft, soggy waffles?
Probably not.
I also sense that he does not enjoy the soft, soggy waffles as much as he says that he does, but he’s quite stubborn and now that I’ve pointed it out and berated him over the SS waffles, he won’t quit them. (Great wife.)
See. We have an atrocious waffle maker that belongs in the trash because no matter what kind of waffle batter you use, no matter how hot the iron gets (never hot enough), how much butter you add (you need LOTS for crispy waffles), the waffle iron produces a waffle that is squish city. Very gah-ross. The waffle doesn’t even get golden brown. You can leave it in for three cycles and… nothing. Atrocious is an understatement.
However. We can’t get rid of this waffle maker because it’s Eddie’s favorite. Sort of like how he doesn’t like toast? He only likes warm bread?
Well. He also likes soggy waffles. Clearly I have a maaaajor issue with us.
Last Sunday, as we made waffles in our respective irons, as I watched him smear jelly on his soggy waffles, I was like… this is an abomination to breakfast everywhere. Waffles have to be crispy. And not only crispy – but have a little texture too. Like BACON. Crunchy bacon bits inside of crispy waffles. Double the texture!
Am I in heaven?
I might be, but it gets better. Bourbon and brown sugar butter. Spread that ish on everything.
Fresh blueberry maple syrup. Pour some sugar on all of it.
More crunchy bacon on top! Because I do what I want.
It is lovely and wonderful and not super duper heavy even though it appears to be.
I think waffles are quite summery, so there’s that.
Crispy Bacon Waffles
Ingredients
- 10 slices bacon, chopped and fried
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups buttermilk
- 2 teaspoons vanilla extract
- 1 large egg
- 1/2 cup unsalted butter, melted
bourbon butter
- 6 tablespoons unsalted butter, softened
- 1 tablespoon brown sugar
- 2 teaspoons bourbon
- a pinch of salt
blueberry syrup
- 1 cup fresh blueberries
- 1/2 cup maple syrup
- 1/2 cup water
Instructions
- Preheat your waffle iron the the highest setting.
- In a large bowl, whisk together the flour, sugar, cornstarch, baking powder, soda and salt. In a smaller bowl, whisk together the buttermilk and vanilla extract. Separate the egg, placing the egg white in the bowl of your electric mixer and the egg yolk in with the buttermilk.
- Beat the egg white on high speed until stiff peaks form.
- Stir the buttermilk and egg mixture into the dry ingredients until just combined. Stir in the melted butter until it’s combined – it will take a minute or two to incorporate. Fold the stiff egg whites into the batter and then fold almost all of the crispy bacon bits (I reserve some for topping) into the batter. Spoon 1/3 to 1/2 cup of batter into the hot waffle iron. Cook until crunchy and golden, about 2 to 3 minutes a piece.
- To serve the waffles, add a slice of the bourbon butter on top. Sprinkle with some of the reserved bacon and cover with the blueberry syrup.

- Whisk ingredients together in a bowl until combined. I used a spatula to fold some of the bourbon into the butter. Scoop the butter onto a piece of parchment paper and stick in the fridge (or freezer, if you’re rushed) to firm up a little bit before serving.

- Place the blueberries, syrup and water in a saucepan and heat over medium heat. Once the mixture bubbles, reduce the heat to a simmer and cook for 6 to 8 minutes, until the blueberries burst. You can additionally mash the berries or even throw the mixture in a food processor.

Anyhow, these waffles look fantastic for all the obvious reasons including, like you said the 3 b’s. But I just disagree of being a blueberry, I would only want to be the bacon. If I had to be a “b” Okay, that just sounded wacky.
But yes, I’m getting on these waffles, actually right now as it’s time for breakfast. Time to impress my wife.

that’s funny, in Norway, waffles are usually soft like pancakes. I like both kinds though!

Who likes soggy waffles? The point of waffles is that they are crispy. If I wanted something soggy I would make crepes instead. These look divine. If only I had a decent waffle maker.
I like soggy waffles with just a small amount of crisp. I guess I’m weird too!! MMmmm, bacon in waffles sounds just amazing. I would totally eat this for dinner.
You had me at bourbon butter! I like to make waffles in mass quantities and freeze them…you can reheat them in an empty skillet pan with a lid (like reheating pizza) and it gets them nice and crispy. Might even help out those SS waffles.

I can never get my waffles crispy enough, no matter waffle iron I use. I always have to let them cool and then re-crisp them in a toaster!

True story – I remember one of my elementary school teachers teaching us the saying Never Eat Soggy Waffles to remember the direction of North East South West (ya know, if you wrote that in a circle? Am I making sense??)
Anywho. If we learned that in school, then it’s true ;) I hate soggy waffles! They have to be crispy crisp extra crisp.

I am also a soggy waffle lover. I mean, I like them crispy, too (but not too crispy), but I can eat them soggy and not mind at all. My husband’s the pickier one, who actually introduced me to the crispy waffle. LOL.

I can go both ways with my waffles, though sadly, I haven’t owned a waffle iron since 2009. I need to fix that for these. I can’t think of anywhere on the island where I can buy a waffle with bacon inside, and that’s the very best.

I’m now hungry for breakfast again ;) These are gorgeous! I haven’t had a waffle in such a long time, but these make we want to get a waffle iron. I had one once, but no matter what I did, the batter always stuck to the iron. I got so fed up with it that I threw it out….now I wish I hadn’t. Maybe I’ll just invest in a better one!! I bet the lemon waffles would be just as delicious!
