Cinnamon Sugar Bourbon Peach Upside Down Cake.
There’s a very important reason that you must know about this cake.
And noooooo, it’s not because I had to suffer through WWE summerslam or whatever that torturous thing was called last night.
But I did and it was. Torturous, that is.
No no, it’s because peach season is almost over, especially GOOD peach season, and if you’ve been around for awhile you know that every year the hunt is on for just that one good peach. Because a lot of times it’s only one. To get two plus good peaches a summer is a unicorn. Same goes for mangos.
Right??
Example: this past weekend I had the best tomato of my life, ever. I know that sounds dramatic but it was crazy sweet and juicy and I doubt I will get one close to that this year. Related: most delicious BLT, with avocado.
So since I can’t always get that ideal perfection with peaches, I have to do things like mix with them with cinnamon sugar and bourbon to make them extra wonderful.
Oooooh it’s oh-so delish. (<sorry)
I ended up making this cake because… I first made a pie.
That was a massive fail.
I just can’t get the hang of it on the regular. It was like I didn’t use enough peaches and berries and I messed up the crust and it wasn’t pretty and the berries didn’t get juicy and instead all of the fruit had this gross flour coating on it and… and… and… oomph. Don’t worry, we still took a few bites for quality control.
I had to do something though! I needed my peach dessert fix for the summer. Which is almost over?
Okay okay, I knoooow that every time I say the summer is almost over, you yell at me. I don’t *really* think that the summer is almost over, I’m aware that there is an entire month of summer left. However, I still have a child brain and can’t get it through my head that I no longer have to go back to school the third week of August (I mean, it’s only been, um, like, TEN years) and I just think that the end of August will be forever end-o-summer days for me.
Which is the worst, because the moment I get the hang of realizing summer goes until late September, kids of my own will probably be going back to school the third week of August. Life is so unfaaaaair.
See also: I am continuing to eat all the summer foods though late September, so there is that. It’s real, people!
[sidebar, can we talk about my love for this cake stand? It was my grandma’s and while I have 24 too many cake stands (maybe 25), this is my faaaave for obvious reasons.]
All steamy peach cake and whining aside, what did you do the past few days? Where did you go? What did you eat? I ate some of the best pizza which will make every dinner this week want to cry with sadness. No, really, I just keep belting out “Nothing Compares to You” circa 1989 every time I look at that photo.
And I made Eddie hang like 33 pictures in our house and I thought it would take half an hour but it took like six hours.
OH and I also had some shaved ice which was fantastic. Can I recreate shaved ice? Teach me these things because I need that in my life.
Let’s swap: upside down peach cake for coconut watermelon shaved ice. YES!
Bourbon Brown Sugar Peach Upside Down Cake
Ingredients

- 4 tablespoons unsalted butter
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons bourbon
- 6 peaches, sliced into 1/4-1/2 inch slices (peeled if desired)

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 12 tablespoons unsalted butter, at room temperature
- 3/4 cup sugar
- 2 large eggs
- 2 teaspoon vanilla extract
bourbon whipped cream
- 2 cups cold heavy cream
- 2 tablespoons bourbon
- 2 tablespoons powdered sugar
Instructions

- Place a 9-inch cake pan on your stovetop and heat it over low heat. Add the butter and once melted, whisk in the sugar and the cinnamon until it starts to bubble. Whisk in the bourbon, then stir for 15 seconds and turn off the heat. Let it sit there while you make the cake.

- Preheat the oven to 350 degrees F.
- Place the butter in the bowl of your electric mixer fitted with a paddle attachment and beat on medium speed until creamy. Beat in the sugar and gradually increase the speed to high, beating until fluffy and scraping down the sides if necessary, about 2 to 3 minutes. Beat in each egg until combined. Beat in the vanilla extract.
- With the mixer on low speed, add the dry ingredients and stir until the batter just comes together.
- Take the peach slices and place them in the bottom of the pan, over of the sugar and bourbon mix. Crowd the pan and layer the peaches slightly if needed. Place dollops of the batter all over the peaches and gently spread evenly to cover. Bake the cake for 35 to 40 minutes, or until the top is golden brown and set. Remove from the oven and only let it cool for about 5 minute, just so the fruit settles and stops bubbly. After 5 minutes (no longer!), run a knife along the edges of the cake and place a cake plate over top, then gently flip the cake to remove it from the pan. Here, you can fix any fruit than has slid off or rearrange it if desired. Let the cake cool completely before serving it with the bourbon cream.
bourbon whipped cream
- Place the cold cream and bourbon in the bowl of your electric mixer fitted with the whisk attachment. Beat on high speed until peaks form. Beat in the powdered sugar and serve.

I had a perfect peach last weekend. I got greedy and tried my luck again on the same day and was rewarded with a mealy mushy one… As we transition into Fall, I can’t help but look at this cake and think how good it would be with plums! Delicious!

The features have been so good this year. But on the subject of shave ice, you can make your own. You just have to use a Tupperware to make a big ice block, and then Google piragua razor. Works a treat.

Pies can be so difficult sometimes! But look at what came of it – I would be sad if this brown sugar, peach, bourbon combo never came to life! I must try it out before, as you say, summer is “over.” But not over over.

Did you and Eddie get into a massive fight during the hanging picture marathon? Because Connor and I almost get divorced every time we attempt to put ANYTHING on a wall, and I’m convinced all married people want to kill each other during these types of projects. We made a gallery wall within about a week or two of getting our apartment, and I’m surprised we’re still together.
The thought of summer being over just bummed me out and I need to hoard all of the peaches now. I haven’t had a perfect one yet this summer; actually they’ve all been kind of meh. Seriously? We have a ‘great minds’ moment. I know just how good this is because I made almost exactly the same thing! I had neighbors over for a slice and then gave half away to one of them so I would be unable to eat nothing but cake for dinner.
I love the pineapple variety but this passed muster with me and now love them both.

I made this for a pot luck today and it was eaten in 10 minutes! The bourbon caramel sauce is a delicious addition to a traditional peach cobbler and as an upside down cake the peaches become extra soft and wonderful. I will make it again soon! Great recipe!

When I was a kid, my mom- the queen of random (unnecessary) kitchen appliances- had this ice shaver thingy that was. My. Childhood. There are containers you freeze water, juice, whatever in and then pop in the machine, and crank a turny handle thing and shave the ice yourself into a bowl below. Soooo fun! It’s on Amazon!

I made this cake tonight for my parents’ joint birthday dinner, but I subbed in apples for the peaches (Dad prefers apples). It was a massive hit. I ended up making 2 cakes because I sliced too many apples (note to self: 6 apples is apparently more than 6 peaches, sliced) and I can’t wait to share with friends too. And also have it for breakfast tomorrow with bourbon whip on my coffee. Normal day.
