My favorite easy meal is a salad! I always have spinach and fresh produce on hand, so I toss all of it together, top with some oil and balsamic and I’m good to go!

For a quick weeknight dinner – meatballs, of any variety, really. Meatball subs and Caesar salad! Spaghetti and Italian meatballs with roasted broccoli! Teriyaki turkey meatballs over rice with edamame! Sausage meatballs over polenta with kale and roasted tomatoes! Sesame spiced turkey meatballs and smashed chickpea salad and sliced cucumbers! Holy cow, I think I just came up with next week’s meal plan.

I love taco salad for easy dinners. Just cook up some ground beef and throw it in a bowl with whatever veggies are on hand. Poof!

Naan pizzas are my favorite weeknight dinner. A whole wheat naan + your favorite toppings + 10 minutes in the oven at 450 = weeknight magic!
Tacos are my go-to easy weeknight meal!

Currently my favorite weeknight dinner is roasting veggies (brussels sprouts, delicata squash, carrots or whatever I have on hand) with curry powder, mustard powder, smoked paprika, S+P, with chicken italian sausages. I let it go for about 40 minutes at 400 degrees. So easy and good! I follow you on instagram, and I am subscribed to your youtube channel. :)

Easy weeknight dinner is chicken breasts (always have on hand in the freezer)–lightly coated in panko crumbs, spritz with olive oil, and bake in the oven. Serve with some broccoli or a salad and a baked potato for the boys who need a little extra to get full!

My favorite weeknight quick meal would be cheese & onion quesadillas with soup or salad. If we have any leftover meat, we’ll throw that in the quesadillas too.
My favorite easy dinner is a slow cooker chicken enchilada soup – you can throw in frozen chicken and the only prep work would be to cut up onions and garlic. So simple!
