Not very original, but chili is my go-to for easy but delish dinner in cold weather :)
When I don’t have a lot of time for dinner, I like to make your 30-minute Cajun Salmon with a side of quick sauteed green beans. My husband and 3-year old son both love it and neither dish takes a lot of prep or cook time. Yeah for quick healthy meals!

My recent favorite is what I call “cheater’s bolognese” — sauteed ground beef with good jarred marinara sauce.

My favorite easy dinner recipe is probably instant pot thai beef curry. you just use almost a full jar of curry paste, coconut milk, coconut aminos, stew beef and pressure cook it, quick release and add frozen stir fry veggies. Lime juice and cilantro at the end :)

Our go to easy dinner recipe is roasted veggies with a fried egg on top – easy with whatever we have on hand!
Taco salad. Never get sick of those flavors!!
We make a quick pot of quinoa, steam some frozen broccoli, and stir together with a couple ounces of goat cheese. Quick, warm, delicious!

My favorite easy dinner recipe this year has to be your easy weeknight chicken tacos – they are fabulous with corn tortillas and make delicious nachos as a second meal too. Sometimes I even take some of the chicken to work as an easy lunch meal. And you are right – its the chicken thighs that make it so yummy:)
Noodles with frozen veggies, peanut butter, soy sauce, and chili sauce. Add chicken for my husband and tofu for me. Easy.

A plain old tuna fish sandwich. Never fails!
My easy got to dinner is grilled salmon with a homemade Asian marinade with steamed veggies over brown rice. Easy and delicious!
I love whipping up egg bowls! Rice (which we always have in the fridge), topped with whatever veggies we have on hand & a fried egg.
My favorite easy dinner is my mom’s spaghetti sauce. Just brown the meat, add the other ingredients, and let simmer for a few hours!

my favorite easy dinner is steaming up frozen potstickers (or soup dumplings) from trader joes. not much cooking involved (and not many dirty dishes!)
My go to dinner is a Costco salmon burger over either greens and rice or some other veggie. Always a staple in my fridge and freezer!
Easiest dinner is heating up frozen Trader Joe’s chicken tikka masala… not ideal but it works. Rose gold is my fave!!
