I usually throw a bunch of chicken in the crockpot on Sunday and use it for a variety of meals throughout the week–tacos, soup, salads..the possibilities are endless!!!
Not much of a recipe, but eggs are my go-to.
My favorite easy dinner is seared salmon with baked sweet potatoes and roasted broccoli :) Comes together so quick and my kids gobble it up!
Pork chops and sweet potato fries! Minimal prep, short cooking time, and once you add some greens on the side, it’s a decently balanced dinner.

White fish with a cherry tomato, green onion and white wine sauce served with a side of rice. Super easy and the best part-no complaints!
Easy spicy ramen for the win. All you need is one pot and a few pantry ingredients and you have warm, homemade ramen for days. Also, I pre ordered your cookbook!

My favorite easy dinner recipe is any combination of roasted vegetables, chickpeas and a grain (usually farro) with a tahini sauce of some sorts. It’s nutritious, comforting, and feel-good and tastes delicious!
Tacos! Any kind of tacos for an easy dinner. So many options. . . Chicken, turkey, beef, vegetarian! Yummy! : )

We have pizza night once a week and try to switch up the toppings to keep it fun!
My favorite easy dinner is brown butter gnocchi with spinach, walnuts, and parmasean. It’s an older Cooking Light recipe and I make it an embarrassing amount of times every month because it’s so delicious (and it has spinach in it, so it’s basically a health food, as we know).
Slow cooker chicken (which I have going right now!)

Hi! My favorite quick dinner dish is pork chops with peppers and onions with sweet plantains. It’s fast and minimal prep time:) Best part is my daughter eats it all up.
Mexican style eggs, beans and tortillas.
BBQd tuna steaks. We cook them from frozen and they’re only on the BBQ for less than 15 minutes. Which means you’ve got to be fast with the side dishes!
Ever since I got an Instant Pot, dinner is so much easier. My fave is using it to make teriyaki chicken, which I then mix with stir fried veggies.

I follow on Insta and Facebook! My easy dinner recipe is called Mexican Thingy—I brown one pound of ground turkey and then add a jar of salsa and let it cook for a few minutes. Then I crack and add 4 eggs and cover the pan until the eggs are over easy! Usually I throw a salad together to go with it too!
Peas and ham pasta— boil diatini pasta and while it cooks, sauté ham cubes in a skillet with butter. Add chicken stock and the pasta dump in some peas. Too with parm cheese. My kids love it and it take about 15 minutes!
Egg roll in a bowl all the way! This is our #1 easy dinner. We have it at least every other week.

I love breakfast for dinner! Eggs fried in coconut oil, some avocado if I have it…little hot sauce. Yum!
Chicken Breast, sweet potatoes, and green beans….all roasted on a sheet pan! It’s super easy!
Whenever I make a roast chicken or beef, I use the left over chicken and make individual pot pies and give them to my relatives. With the beef, I make either burritos or chimichangas.
caprese pasta! it’s easy when i’ve forgotten to defrost meat (although hubby doesn’t consider it a real meal without it lol)

Following on both! My go-to easy recipe is a roasted spaghetti squash topped with chicken sausage + a homemade meat sauce (and topped with Parmesan cheese of course!)
To make a quick dinner I go with veggie fried rice!
And I preordered the book, so excited!
Ground turkey with rice, peas and seasonings – with microwave bags, you can just brown the turkey and mix everything together in one pan!
My favorite easy/quick meal is one of yours – crispy egg tostadas with lemon greens and sesame oil. I make them ALL the time and never get tired of them – so delicious!
