If I don’t have much in the fridge to make my backup is always scrambled eggs! Usually add in some mixed frozen roasted veggies… and cheese of course! Eggs are perfect for brekkie, lunch or din din, in my opinion!
My favorite easy dinner recipe is tortellini in a tomato cream sauce. Just buy fresh tortellini that cook in 2 minutes. Jarred sauce cooked with as plash of milk or cream, italian seasoning, garlic powder, and a few tablespoons of onion & chive cream cheese. Mix together and you’re done.
Tacos! We eat them every week because all you need to do is brown and season the meat and throw in a tortilla. Easy and oh so yummy!
Oooooh, that mixer is PRETTY!!! My absolute favorite easy dinner recipe is enchiladas. I feel like I can just throw everything in! LOL :o)
Definitely sort sort of sheet pan dinner – roasted vegetables, delicata squash – so quick!

roast salmon with asparagus, brussels and wild rice. with wine, of course! {i follow on insta (@juliannecara) and fb (julianne casey)}
My favorite quick dinner is a drippy egg over leftovers. Or, if I have no leftovers, then an egg over broccoli and some potato (that I nuked in the microwave, then chopped and crisped in a pan before making my eggs). Flake sea salt and fresh black pepper makes everything seem fancier than it is, hahaha.
Polish sausage, onion and sliced cabbage
My favorite easy dinner is buffalo chicken pizza! I use pre-cooked chicken and diced red onions usually left over from a previous meal.
My fave is throwing some chicken breasts in my instant pot with some mexican spices and a jar of salsa verde. 10 minutes later, a few taco shells and some toppings and its taco night :)
Breakfast for dinner!

Salmon with a spice rub and then adding some maple syrup at the end. :)
My favorite easy dinners are the ones I make on the weekends and freeze to eat later.
Hey! My favorite easy family dinner is sweet fried plantains or tostones with scrambled eggs. My hubby and kids love it!
My favorite easy dinner recipe is slow cooker tacos. Throw some frozen chicken breasts in a slow cooker with some salsa and taco seasoning (if I’m feeling fancy, I will even follow a recipe!) and then — ta da — dinner is basically served.
Chicken wraps! I always have tortillas on hand. Throw in some chicken, avocado, tomatoes, whatever is available and dinner is served.
My favorite quick dinner is potatoes, broccoli, chopped onions and trader joe’s smoked chicken apple sausage roasted in my cast iron pan! I season the potatoes and veg with some smoked paprika, garlic powder and salt and it comes out so savory and good!
zucchini noodles all day, every day- so quick and healthy!
Mongolian beef in the slow cooker over rice
Chicken curry and grilled cheese w/ tomato soup.
Favorite easy dinner— paninis puked high with whatever is leftover in the fridge and a salad. Yum!

Tacos! So basic, I know. BUT! It also happens to be my husband’s (and mine, let’s be real) favorite meal. Today’s his birthday and a Monday, so winner winner taco dinner.
Saute a bag of frozen shrimp in salsa- add taco toppings. Easiest shrimp fajitas ever. Works best with restaurant style salsa :)
