What To Eat This Week: 5/3/20.
How is it already May?!
Trying to bring in some of my favorite flavors this week… with tacos of course.
Let’s kick things off with this brown butter garden vegetable pasta skillet! You can seriously put whatever veggies you have in this. And it goes great with a house salad.
Tuesday is Cinco de Mayo! So tacos it is… I highly suggest going with these bang bang cauliflower tacos. Love them – the sauce is addictive. You can find all of my other taco recipes here too.
Baked parmesan chicken with lemon arugula is up next. This is a light but satisfying meal. One I make about every other week! The leftover chicken is really good too.
Next we’re going with fajita stuffed sweet potatoes. So versatile. Again, you can add whatever veggies you may have. I like to serve these with guacamole too.
Pizza friday! Try this slow roasted cherry tomato pizza with garlic cream sauce. It’s a little high maintenance but may just be the best pizza you make at home!
If you haven’t made this blackened shrimp caesar salad yet, now is the time. Holy major flavor explosion.
For breakfast, I’m going with my favorite overnight oats. And for lunches, marinated white beans with all the things!

I made the slow roasted cherry tomato pizza last week, it is one of my favorites! My husband hates tomatoes, but will eat them this way!
