What To Eat This Week: 7/26/20.
I am in love with this week’s menu!
It’s flavorful and fresh and easy too!
Summer shrimp zoodle bowls kick off the week! These are super versatile and you can pretty much add whatever you love. They are fresh and satisfying.
If you haven’t made the sun dried tomato corn chowder yet, now is the time! The crispy goat cheese croutons take this over the top. The meal is super flavorful and easy to make.
Next up – nacho cheese quinoa salad! You can use ground beef or turkey for this meal, or even leave it out. It’s often served as a potluck side dish, but I’m telling you it is so good for dinner too.
These greek chicken lettuce cups with avocado tzatziki are one of my favorite meals. Leftovers are also great and can be served over a greens salad or quinoa salad!
Salmon BLT sliders are a (majorly) oldie but goodie. You can do sliders, larger sandwiches or even an open faced sandwich. The chipotle mayo is amazing.
For the weekend, make a big batch of crispy orzo with artichokes and lemon. The flavor here is incredible and leftovers are great too.
