What To Eat This Week: 10/11/20.
SO many delicious meals on the menu this week!
We’ve got pumpkin and enchiladas and soup, oh my!
Start this week off with a batch of pumpkin soup with grilled cheese croutons! This is so hearty and comforting. Leftovers are obviously amazing!
Next, saucy skillet chicken enchiladas for taco tuesday! You can prep a lot of this meal ahead of time and it’s one of our favorites.
Broccoli cheddar stuffed spaghetti squash boats are on the menu for Wednesday. Cannot even explain how much we love these. You can also make them ahead of time by scraping out the squash noodles and mixing it all in a dish.
Try this sheet pan honey garlic salmon with brussels sprouts! Super easy to throw together and a really delicious meal.
Make these pumpkin beer brisket melts for the weekend. They are major comfort food and a huge hit!
Roasted butternut squash french breads are perfect to throw together.
For lunches, make a batch of this roasted cauliflower farro salad. It’s a great make-ahead meal! And breakfasts will be my almond butter baked oatmeal.
