This week is a crazy one! Here’s my thoughts on what to eat, with lots of options depending on how you’re spending the week!

Monday, make a batch of this butternut white chicken chili. It’s easy and delicious, comforting and hearty, and leftovers are great for lunch or another quick dinner.

On tuesday, make this mediterranean kale salad with chicken. Use a rotisserie chicken! This is a nice break from seasonal flavors, and since this is made with kale, it’s hearty enough to store leftovers in the fridge.

Next, keep things simple with this pasta parmesan frittata. It’s delicious and so simple. Your greens are right in there too.

Thursday is choose your own adventure! Are you making Thanksgiving dinner? Or choosing something untraditional but still special?

On Friday, use your leftovers to make this roasted turkey ramen. If you don’t have turkey, you can make this with leftover rotisserie chicken or keep it meatless.

Leftovers are the name of the game the rest of the week!

For breakfasts, make these cranberry overnight oats! I’m making extra cranberry sauce early so I can have these all week. For lunches, I suggest something super simple, like my make ahead egg salad.
