What to eat this week
Start the week off with a comforting bowl of cheddar cauliflower chowder. It’s warm and delicious and you’ll have some leftovers for the week.
For taco Tuesday, make these fish taco bowls! I love how easily customizable these are. They are filling and satisfying too and everyone has fun building a bowl.
If you have some leftover pico from Tuesday, make my black bean baked taquitos. They are so crunchy and wonderful.
Next up, these asian inspired sloppy joes. We adore these. Serve with some cacio e pepe brussels for a side.
Fuji apple chicken salad is crisp and refreshing while satisfying at the same time. A really great weeknight meal!
For the weekend, go with my baked sun dried tomato gnocchi and a house salad. YUM.
For lunches, I’m going to do a version of these tomato avocado bagelwiches. And breakfasts? I’m making my vanilla ricotta toasts with banana and pistachios.
