Okay, I know I know I know!
I know we’re still nearly a month away from Spring, but our weather got the slightest warm up yesterday and it got me SO excited. So I scrapped my recipe for today to share these ten recipes that I can’t wait to make. I couldn’t help it. I am just so ready for Spring.
It’s no secret that last year was SO weird. With the whole lockdown situation being brand new, we didn’t know what or how to eat – I didn’t make many of our favorite spring dishes, we stuck to mostly pantry meals, I couldn’t even find some of the spring produce we normally love, we weren’t going to the grocery store, etc. And since our families didn’t get together for Easter, there were a lot of bigger dishes I would often make for those gatherings that I skipped.
Let’s just say that while things may not be back to normal yet, I am so ready to make some of these delish, super springy recipes! I’ve already started searching out some spring produce, that’s just how crazy I am at the moment. Live it up with me, please!

Basically yes to all these! :) I can’t wait for spring veggies…and spring, in general. :)
I’m definitely going to try the Shaved Asparagus Salad. I make this veggie for my husband all the time but I don’t care for asparagus cooked. I do, however, love it raw so I’m all in with this recipe. We’ve also had a bit of a warm up here in northern IL so it’s all headed your way…enjoy it as we are. It’s pretty much snowed here everyday for what seems like months (I exaggerate a little!) so this is a welcome breather.
Not on the above list, but I made your spring veggie frittata for my April birthday brunch a couple years ago and it was SO good. Can’t wait to make that again.
