What to eat this week
Kick things off with my honey mustard chopped chicken salad! This salad is SO DARN GOOD. It makes for good leftovers too, or you can meal prep this and store things separately for lunches!
For taco Tuesday, try my lime loaded shrimp sheet pan fajitas. Everyone loves these and they come together so fast. You can marinate the veggies ahead of time too – and the shrimp for a few hours before.
This new quick and easy ravioli soup is up next! It’s embarrassingly easy. Serve it with a house salad for a wonderful, comforting meal.
Salmon citrus avocado salad is wonderful for the season. It really highlights juicy, refreshing citrus. You can use roasted salmon like I do in the post, or even grab some smoked salmon for ease.
For the weekend, make this honey chipotle chicken pizza with goat cheese. It’s amazingly flavorful and leftovers are amazing.
Finally, make these crispy, sticky chicken fingers with blue cheese sauce! Oh my word. I can’t stop making these. Serve with this wonderful tortellini salad that we can’t get enough of.
For lunches, I’m going to make a batch of my summer chicken salad. It’s still great this time of year! And for breakfasts, a batch of pumpkin protein pancakes!

I’m making shrimp quesadillas, stuffed kobucha squash, salmon and veggies, chicken fajita sheet pan, and spicy chicken and green beans.
