What to Eat This Week
My chickpea basil curry kicks things off this week! It’s so filling, comes together in 20ish minutes and is just so comforting and wonderful for winter.
For Taco Tuesday, I’m going with our favorite ground beef tacos! These are so good and you can always make the ingredients into a taco salad or use the leftovers however you please.
Honey mustard chopped chicken salad for mid-week! This is ridiculously flavorful and a huge favorite in our house.
Make tortilla eggs for breakfast (for dinner!) one night!
Try this crispy fish sandwich with kale coleslaw. It’s a little labor of love but totally worth it.
Chicken and orzo soup takes you into the weekend. A bit batch for wintery weather that’s oh-so comforting.
For lunches, I’m making a batch of my marinated white beans. Love these on toasts, salads and even alone. And breakfasts in citrus season mean this lemon curd chia pudding!

Made the honey mustard chicken and used it atop cold roasted green beans for a different kind of salad! Soooooo flavorful and am already craving this amazing combo!
