Kick things off with these crunchy roasted chickpea pitas. These are so incredible, versatile and you can really use whatever you love for toppings!

Chicken taco soup is next for taco Tuesday! This is a go-to slow cooker meal for us because it’s embarrassingly easy. The cheese quesadilla croutons are everything.

Next, try this sheet pan pesto salmon and lemon potatoes. You can make the pesto yourself of use a store-bought version – it’s your call!

Warm brussels caesar salad is up next! Oh my gosh, I just love this meal. It’s hearty and satisfying but light at the same time. So good.

Make my potato chip crusted chicken fingers with roasted broccoli for later in the week. You can also chop these up and use them on a salad!

Steak frites for the weekend! This seared steak with air fryer fries is like a restaurant quality meal.

For lunches, I’m going to make a batch of my greek orzo salad in a jar. And for breakfasts, my peanut butter overnight oats!
