I’m absolutely loving this week’s menu!
We have some grilled dishes, my favorite farro and a delish shrimp roll coming right up!
What To Eat This Week
Kick things off with these grilled whole sweet potatoes! You can add in whatever you’d like – including some rotisserie chicken or even beans if you want to make them more satisfying. Serve with a small greens salad too for extra oomph!
Next up, apricot chicken and broccoli! One of the huge favorites here on the site. It’s so easy and so good.
Shrimp salad rolls are next. These come together FAST. Serve with your favorite potato chips for the best summer dinner.
Try this slow roasted tomato farro salad next. This has so much flavor, is incredible warm or cold and super filling.
Grilled thai pork tenderloin rounds out the week. Everyone looooves this meal too and leftovers are great too!
End things on an easy meal with my potato chip frittata. It’s a great clean out the fridge dish – add whatever you have left from the week!
For lunches this week, I’m going with my mediterranean marinated chickpeas! Love these on salad or toast. And for breakfasts, some of my rainbow chia pudding!

That apricot chicken is a consistent favorite. I shared the recipe with my mom and it is now in her dinner rotation too. So simple but so delicious. Thanks!
