Oh my word do I LOVE this month. Thanks for all your feedback last week on the new format of the menu posts! This week we have so many delicious, seasonal meals that really focus on fall flavors.
What to Eat This Week
Kick things off with my blackened shrimp kale caesar salad! We adore this – so simple but so much flavor.
For taco Tuesday, mushroom quesadillas with avocado cream. So crispy and delicious.
For all the fall feels, make my cider braised pot roast with caramelized onions and butternut squash.
Spaghetti squash parmesan because it’s the most delicious!
And try my chicken soup risotto because it’s cozy and comforting heading into the weekend!
Finally, my pretzel crusted chicken salad is loaded with flavor. Pickled onions, white cheddar, crunchy apples!
For lunches, I’m making a batch of my mediterranean marinated chickpeas. These are great on a salad, in a pita or just from a bowl!
And finally, a batch of salted maple granola for breakfast. It’s incredible.
