Chocolate Dipped Strawberry Swirl Marshmallows
These strawberry marshmallows are the perfect treat! Strawberry swirled marshmallows sprinkled with strawberry powdered sugar and drizzled in dark chocolate. These are a dream!
I’ve got the sweetest little treat for ya!
I am in love. These strawberry swirl marshmallows are so fun. They are pretty and delicious and a cute treat to serve for Valentine’s Day and beyond.
If you’ve been around here long enough then you’re probably familiar with my straight-up obsession with homemade marshmallows.
I have made so many versions. Like so many! They were one of my go-to desserts between the years of 2008 and 2015 or so. And everyone LOVED them!
They are unexpected. Gooey and sweet and delicious but also light at the same time. Basically, perfect.
I’ve done chocolate coconut marshmallows. Champagne marshmallows! Buttered popcorn marshmallows and pistachio marshmallows. Even marshmallows with beer.
It’s always been marshmallow insanity over here.
And now we’re onto the prettiest strawberry swirl marshmallows which make me HAPPY. Mostly because they are just lovely to look at and definitely because they are super delicious.
To make these strawberry swirl marshmallows, I crush up some freeze dried strawberries and stir them into half of the marshmallow mixture. It’s THAT easy.
Freeze dried strawberries are key. I usually get mine at Target, but you can use any brand.
You could also use raspberries or even blueberries. Or blackberries! Even banana? Pretty much any kind of freeze dried fruit will work. Woohoo!
Then I let them set and drizzle them with chocolate. Or dip half of them, or the entire thing – whatever!
Sprinkle on some crushed strawberries and boom, you have these dreamy little treats.
They are so wonderfully flavored like strawberry. I can’t believe it!
I love to make these as a treat or dessert because you can make them ahead of time! You can also cut them into these larger squares or do mini bite-sized pieces too. Options are endless and oh-so wonderful.
Strawberry Swirl Marshmallows
Chocolate Dipped Strawberry Swirl Marshmallows
Ingredients
- 2 cups freeze dried strawberries, crushed, plus extra for sprinkling
- ½ cup powdered sugar for sprinkling and mixing
- 2 (.25 oz) packets of gelatin
- 8 tablespoons of cold water
- 1 1/2 cups granulated sugar
- 1/3 cup cold water
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 6 ounces high-quality dark chocolate, melted
- 1 tablespoon coconut oil
Instructions
- I start by crushing the freeze-dried strawberries. You can do this in a food processor or you can add them to a ziplock bag and crush them with a rolling pin. You want them crushed into a fine powder. I set aside ¼ to ⅓ cup of the strawberry powder for the marshmallows.
- I stir the remaining strawberry powder into the powdered sugar until combined.
- Place the gelatin in a small bowl and stir in the 8 tablespoons of cold water. Set aside. Spray an 8×8 pan with nonstick spray, then sprinkle some strawberry powdered sugar in the pan and shake well, dispersing it all over the pan, covering the entire thing.
- In a small saucepan, combine the remaining cold water and sugar. Heat over medium heat, stirring constantly until the sugar is dissolved and bubbly, about 3 to 4 minutes. Stir in the gelatin mixture, whisking, and bring it to a boil. Once boiling, immediately remove from heat. Add to the bowl of an electric mixer attached with a whisk. Let sit and slightly cool.
- Add in the vanilla extract and salt. Beat on medium-high speed for 10 to 15 minutes, until white and glossy and shiny and thick.
- At this point, remove half of the marshmallow mixture and place it in your powdered dish. Add the strawberry powder to the remaining marshmallow mixture in the mixer. Beat until combined, another 1 to 2 minutes.
- Remove the strawberry marshmallow mixture and place it on top of the regular marshmallow layer in the dish. I use a knife to swirl things together - I don't do this in any specific way! I just try to swirl the two without mixing completely, then I smooth out the top.
- Top with a sprinkle of strawberry powdered sugar. Let sit for about 4 hours, or even overnight.
- Stir the coconut oil into the melted chocolate. You can also melt both together in the microwave.
- Once the marshmallows are set, slice them into squares. Any size works! Whatever you like. Drizzle with melted chocolate or dip them in the chocolate. Sprinkle on a few extra crushed freeze dried strawberries.
- I store these at room temperature in a sealed container on the counter.

I wonder how these would work using strawberry emulsion instead of freeze dried? I have some emulsion left over from a precious baking recipe…
so the thing about that is that i think you would need to use so much that it would compromise the marshmallow mixture. the flavor of the freeze dried comes through strongly in a small amount of powder, which brings out the strawberry flavor while keeping the integrity of the marshmallows.
i do think you could use some of the emulsion as a swirl in the top of the marshmallows?!
Are the strawberries measured and then crushed?

for future recipe reference, if it was the other way around the recipe would state 2 cups crushed strawberries. :)

These look so amazing – am I missing the step where the crushed freeze-dried strawberries are mixed into some of the marshmallow mixture before they’re spread & set? Right now it looks like the classic marshmallow mixture is spread out & then the strawberry powdered sugar is sprinkled on top…

Hi! I Just made these today. I used two .25 oz packets of unflavored gelatin and they came out perfect. Hope this helps :) You should definitely make these!!!

So good and so easy!! Made these with my marshmallow loving almost-3-yr-old. Strawberry flavor is fresh, reminiscent of strawberry ice cream. We skipped the chocolate. Marshmallows are so much better than store bought!
Made these today and they are so good!!! I followed recipe exactly. So much strawberry flavor, but not over powering. Best marshmallows I’ve ever had. This was my first time making them homemade. A 1.2 oz bag of freeze dried strawberries is plenty.
