My love for grain bowls knows no bounds. And today we’re doing a roasted veggie and chickpea one, which may sound rather boring but oh my gosh is it delicious. Like, so warming. Comforting and cozy. Satisfying and filling. A great meal to prepare ahead and one that you will find yourself making on repeat.

Cauliflower and chickpeas are roasted with turmeric, garlic and ginger to create a beautiful sheet pan of golden roasted veggies. Then we’re throwing them into a bowl and drizzling with a lemony hummus dressing that is hard to pass up.

The cauliflower and chickpeas are also great as a side dish alone! I love roasting them together and getting crispy bits of each.

And! Another option is to stuff them inside pita

This is a versatile meal, one that you can make your own depending on what you love. That’s my favorite kind.

Here’s how I do it!

I roast the cauliflower and the chickpeas together in one pan. They get tossed in a delicious spice mixture of turmeric, garlic and ginger. Lots of salt and pepper too. I like to really roast the heck out of these. A temperature of at least 425 degrees F and sometimes even 450 degrees F. I want them roasty, crispy, golden and super flavorful. 

This is really the MAIN part of the bowl, so feel free to jazz it up with additional spices you love (smoked paprika, anyone?!). This is where most of the flavor is going to live.

While the veggies roast, I make a hummus dressing that is incredible. I eat this on salads ALL THE TIME. It reminds me a lot of my tahini sauce from Everyday Dinners which is another favorite. This dressing is flavorful, lemony, easy and adds a satisfying punch to any bowl or salad. It’s great. 

To make it, I whisk together hummus, lemon juice, honey, grated ginger and a pinch of salt and pepper. Then I whisk in a little cold water to smooth it out. That’s a trick I use with hummus too and it makes all the difference.

That is it! See? These are so incredibly easy that there is no excuse not to make them.

I make my favorite grain for the base of the bowl. In this case, I go with pearl couscous again. I’m like a broken record, but it really is one of our favorites. Of course we also like to do it with quinoa and it’s even good with something like orzo. 

I toss lots of cilantro into this bowl. You can do sliced green onions, other herbs – anything you love!

Best part about these: they are wonderful served cold or warm. Eat them right after making so you have a warm grain bowl, or prep them ahead of time for lunch and eat them chilled, right from the fridge. Delish!

Ingredients

hummus dressing

  • ¼ cup plain hummus, or your favorite variety
  • ½ lemon, juiced
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger, grated
  • kosher salt and pepper
  • 2 to 3 tablespoons cold water

Instructions 

  • Preheat the oven to 425 degrees F.
  • Toss the cauliflower and chickpeas with the olive oil on a baking sheet. Season all over with the turmeric, ginger and garlic powder. Sprinkle on a big pinch of salt and pepper and toss well.
  • Roast until golden and crispy, tossing once or twice during cook time, for about 25 to 30 minutes.
  • While the cauliflower roasts, cook the couscous (or other grain) if needed and make the hummus dressing.
  • Whisk together the hummus, lemon juice, honey, ginger and a pinch of salt and pepper until smooth. Whisk in the water until the mixture smooths and thins out.
  • To assemble, scoop the couscous into bowls. Top with the cauliflower and chickpeas. Drizzle with the dressing. Top with cilantro and enjoy!
