Grilled Corn + Cheddar Quinoa.
I’m having this little issue… that’s involving not being able to close my eyes at night.
I’ve always had weirdo sleep anxiety, probably because I’m a first-born child and a full-blooded Scorpio with a major nutcase brain that pretends to be a normal brain, and if I can’t fall asleep within like 34 seconds of my head hitting the pillow, I’m all up in my own face whining “omg… I can’t sleep. OMG. I’m never going to be able to fall asleep tonight. Wait. Maybe I should turn the TV off. No. Then I’ll be scared. OMG. I can’t sleep. OMGGGGGGG. What am I going to do tomorrow when I’m soooo tired?”
I’m so ahead of myself that I’m behind.

I’ve always been an early-to-bed, early-to-rise type of gal, moreso because I’ve never been cool enough to do anything, well… cool, late at night. And if I sleep in really late, then I start having anxiety about not getting anything done and wasting the day away. The OMGs just start all over again. Like, constant.
Yes yes, super fun to be in my presence 24/7.
So. This is the story of how real life tells me I am going to marry Ryan Gosling and live in a shack when I grow up. Because last night when I couldn’t sleep… I ended up playing MASH. With myself.
And playing MASH at the age of 29, while lying awake in your marital bed… is sort of different than playing MASH at the age of 12, while sitting at your 6th grade desk, elbows propped up on your trapper keeper and silk shirt sticking to your back because air conditioning like, wasn’t invented back then or something. And it gets even weirder, because then you’re like, supposed to pick four names to play MASH with – people you crush on and want to marry and people you really don’t like and really don’t want to marry?? But you feel like a giant creep because you already are married and so are some of the other people you know, so instead you write down names of your secret-brain boyfriends, that have unknown, uncommon names. Like George Clooney.
Oh and you definitely don’t write down names of boys that are in boy bands and stuff, because at some point, regardless of how exhausted you are, you remember that they ARE DECADES YOUNGER THAN YOU. Um. Mistake. Depressing mistake.
I seriously don’t know how I’d manage in middle school these days, because there is absolutely no way that some computer game could satisfy me like folding my notes into tiny paper footballs, making origami fortune teller finger-things and playing MASH did. I want a paper and pencil, not a hand and a keyboard please.
Oh… wait… you want to know about this quinoa? I dunno. I made a lot of quinoa last week. I even made some KALE that I’ll tell you about. What whaaaat. Weird.
Last year I freaked out over grilled corn. This year I’m continuing the freaking. I mixed it with some quinoa, but while the quinoa was still hot, I folded in a bunch of this incredible organic white cheddar that made it so crazy creamy and packed it with flavor. So few ingredients but such a taste explosion, it’s almost seems totally unfair. It’s way too easy. It’s an awesome side dish. And it’s definitely what I’m going to eat in my shack tonight. So there.
Grilled Corn + Cheddar Quinoa
Ingredients
- 1 cup uncooked quinoa, rinsed
- 2 cups low-sodium chicken broth
- 4 ears of sweet corn grilled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons butter
- 4 ounces cheddar cheese, freshly grated
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat your grill on the highest setting. Shuck corn ears and brush each with olive oil and sprinkle with 1/2 teaspoon of salt and pepper. Wrap each in a square of aluminum foil – just so there is one layer cover the corn. Grill for about 5 minutes each “side” – rotating corn 4-5 times during grilling.
- Once corn has cooled, cut the kernels off the cob.
- Add quinoa and chicken stock to a saucepan and bring to a boil. Once boiling, reduce to a simmer, cover and let cool for 15-18 minutes, then fluff with a fork. Immediately stir in butter, cheddar and remaining salt and pepper. Add in corn and stir to combine, then top with a bit of fresh cilantro. Serve!

1) I don’t understand middle/high schoolers these days. They seem weirder than when I was that age.
2) Exactly when did all pop stars become younger than me? These two things make me feel old and depressed. At least I look younger than I am… except for these darn wrinkles on my forehead that seemed to have appeared overnight on my last birthday.
So is this were I tell you that I play MASH with my 4 year old because I too love to play MASH!!! Her favs are the Beebs, Erik Karlson (Ottawa Senators Hockey crush), a a couple class mates etc. But because she doesn’t know different car types we say what kind of pet is she going to have. She gets the biggest kick when for kids she picks numbers 1, 2, 3 and 4 and I write down, 9, 22, 10 and 53!
I think I know what I need to play tonight! Tim Bit Soccer can wait!!

Grilled corn! I’m so excited to see the good summer corn starting to pop up at the farmer’s market. This combination with quinoa sounds perfect!
White cheddar and quinoa are literally 2 of the 3 things I actually have in my pantry right now….the 3rd thing being gin….Idontwannatalkaboutit. So basically what I’m trying to say is I’m making this the moment I get off work (and buy some corn) tonight!
I must say that I love your blog! I check it everyday at least once to get my laugh on. Not sure if your aware of the tension between these two wonderful staples ( corn and quinoa) but lets just say that the Incas aka; Team Quinoa and the Spaniards aka; Team Corn, are turning over in their graves right now! Omg they would just die if they saw a plate with those two all snuggled up together! They shunned eachothers “staple” so badly that here it is 2012 and nerdy people like me STILL know about it. Whatever girlie! This war is delicious and I say “shake it up baby”! ;)

MASH is totes the best. I remember once my friend wanted to have a lamborghini as a car choice, cause you know the more good car choices you have the better your ending selection will be. She was trying to describe it to me and I totally didn’t believe her. It didn’t sound real and it didn’t sound possible. I was all WHATEVER, you’re making it up! You don’t know that many NICE car names…. LOL! I still think of that whenever I hear about lamborghini’s.

I’m so sorry about the insomnia…it’s absolute torture! :( I can absolutely relate. I hope tonight is better. And thank you for the yummy recipe! Being a sort of oxymoronic cook (possibly more moronic than oxy, if you KWIM), I can fire up my stove and successfully cook nearly anything in the world save for rice and quinoa (go figure). Rather than tackle quinoa cooking fear, I think I’ll be a pansy and sub in farro. :P

You crack me up so much! Even though I rarely cook, I keep reading your blog because of your humor and the awesome food photos. And the one time I did try something, the snicker-chip-doodle cookies, they were pretty much the most amazing thing ever. if you’re sincere about your sleep anxiety, maybe try seeing a naturopathic doctor about it. there are many natural remedies you can take (via teas or herbs) that calm your mind and let you fall asleep easier. i take something called GABA on those nights when my mind is racing and won’t shut down. just my two cents.

Love it, and it’s great with FETA too and a squeeze of fresh lime….if you don’t mind a slight smell of feet! I’m kidding, no foot smell….it’s really not good that I was happily non guiltily in bed w my iPad and stumbled upon this post….now IM CRAZY hungry and can’t sleep….pay it forward I guess!
So I love MASH. Like love love love it. I was telling the kid about MASH a couple weeks ago and she says “Oh I know this game! It on my phone. It’s an app” sigh. If only she knew the paper I wasted playing this game.
Now onto the corn and quinoa. It looks amazing! Like super duper amazing. I would be all over it!

Yep. This is definitely happening this summer. No doubt about it. Mostly because I just bought quinoa for the first time ever (what the what? I still barely know how to pronounce it) and now I just stare at it, wishing it would reveal its secrets to me…i.e.: what to make with it. As if I couldn’t find something to make on every food blog…ever.

I love everything about this. I love how you can take me back to 6th grade. Granted your 6th grade was a few years (cough ;-) before mine, but there are still SO MANY THINGS I can relate too. MASH is def one of them! And there is an app for that, which is super fun! Although I cannot let go of folding notes. I do it with my niece, she is 12, and like, THE coolest girl in her class because none of her classmates know how to fold hearts, and fancy boxes like she does!
What brand of quinoa do you buy? I looked at my Publix and they only had one kind!
