Favorite weekday easy dinner……Taco Pasta!! Kinda like goulash, but with taco seasoned meat and a creamy queso sauce. Delish!! :)
Shrimp bake! Bake a quart of grape tomatoes and garlic in olive oil at 375 until they burst and then throw in peeled and deveined shrimp with roasted red peppers and voila! Serve over rice or pasta. Super easy and healthy.

A quick dinner that’s always a favorite with me, the hub, and the babe is ground beef sauteed with peppers and onions, simmered for 10 or 15 min with tomato sauce, and served over pasta or veggies. Couldn’t be much easier!
My go to week night dish is chicken soup w/glass noodles & salad.

I’ve never been to Seven Springs, but my husband is from Pittsburgh and his family used to go there all the time.
It looks so pretty!! My favorite weeknight meal is oven baked chicken fajitas with lots of salsa & guac! Merry Christmas Jessica!

Your pictures are amazing! We always have a lot of fresh veggies in the house from our CSA box, so if it’s getting late, I will create some sort of stir fry out of the veg we have, and then add TJ’s frozen brown rice and a few eggs to it, and presto we have dinner!
I travel a lot for work and my kids tell me that Dad’s go to meal is hamburgers, Kraft mac and cheese, and bagged Cesar salad!

We have been obsessed with either sauteing or grilling chicken, cooking up some peppers and either making quesadillas(my husband is a pro!) or fajitas. My favorite weeknight dinner is currently fajitas (I change my mind every couple of months). I chop all the vegetables/chicken on Sunday and then just cook everything that day. Top it with a bunch of guac and call it a meal. Delicious.

HI THERE!! I have followed on YouTube & Insta! My favorite weeknight meal has got to be tacos or sheet pan nachos! Super easy and quick and everyone loves them. I am currently crushing on your pimento cheese biscuits with the jalapenos…dying….they have been added to my NYE party menu!

Salmon is my favorite easy weeknight dinner. It cooks super fast in the oven under the broiler or outside on the grill. Usually serve it with some charred brussels sprouts, obvi :) I already follow on IG and Youtube. Loving the new videos!
