My favorite easy weeknight dinner is pasta with some sautéed chicken, caramelized onions, mushrooms, spinach/kale, and whatever cheese I have on hand (although goat is my all time fav!)
Easiest go to dinner here is roasted vegetables with sausage. Cut up our veggies (my 4 year old helps with this part, using her chopper), season how we like, and throw a variety of chicken sausages on top and pop in the oven.

my favorite weeknight dinner is salmon topped with store bought pesto broiled in the oven with a side of broccoli or a salad

Comfort food. Country pork ribs and sauerkraut. Brown ribs and when almost browned add one onion. Drain sauerkraut, add to pan, add water until you can see it near top, slowly cook (simmer) until ribs start falling off the bone.
My favorite easy weeknight dinner is breakfast, Ha! We bust out some creamy scrambled eggs with spinach and goat cheese and throw in a side of bacon. Done and done!
So basic, but we love eggs when we’re low on groceries or time. My favorite is”pizza omelettes”–fluffy egg crust with toppings of choice. Yum.

Nothing beats a salad bowl with grains, roasted veggies, and a creamy tahini dressing! Quick, easy, delicious and works with whatever ingredients I have on hand.
My favourite week night dinner is Buffalo shredded chicken (made in the slow cooker with skinless, boneless chicken breast) which I eat on salads, in tacos or as a side with roasted veg all week long. Cooking for one has it’s perks! **I also follow on IG and Youtube**
I’m vegan and love Asian inspired flavors, so I like to do black bean pasta with steamed veggies.
My time- and dish- saving trick is to cook the black bean pasta and steam the veggies in the same pot – I just use the steam from the boiling pasta water to cook broccoli and some frozen veggies like peas, edamame, and corn.
Meanwhile, I mix together a sauce made of rice vinegar, sesame seed oil, soy sauce, peanut butter, and water in a bowl in the most high-tech fashion I know (a fork). Sometimes if I’m feeling crazy I like to add some sesame seeds on top of the finished product: fancy gourmet style, baby!

My favorite week night dinner is roasted chicken with veggies. The leftover bones and meat go into my tiny slow cooker and the next morning we have wonderful stock for chicken noodle soup!
My favorite, easy week night dinner, is any thing stir fry. Right now it’s Kung Pao Chicken. Yum!

Chicken chorizo and sweetcorn salad it’s yummy
I just made it last night!! Grated sweet potato (in the food processor, because who has time to manually grate??), chopped onion (okay, fine…also grated in the food processor), chopped bacon, shredded chicken. Add an egg on top and voila! Hash!
Pork Chops and fried rice!

Quesadillas or “fajitas”–you can slap anything in a tortilla, top it with homemade cheese and sour cream, and it’s delicious.
My favorite weeknight meal is crock pot pork tacos… pork loin, salsa and spices for 8 hours on low. Just shred it when you get home from and throw it in a tortilla!
