Quesadillas with homemade sour cream and home-canned salsa, because who doesn’t love those? Plus you can fill them with bits and pieces of what’s in the fridge and usually it works :)

If I win the kitchenaid, I’m giving it to my aunt! Her husband remodeled her kitchen last year. He’s a great man! She’s never had a stand mixer and they didn’t even consider to get one with the remodel. She thought she was going to get one for Christmas but just last week her husband was diagnosed with Multiple Myeloma. I would love to be able to send her some joy this season!! I’m sure their Christmas isn’t going to be the same this year with this dark cloud over them.
I love your blog! Been a reader since 2011. Thanks for all your hard work!! If you’re feeling nosy, I’ve posted every blog recipe I’ve ever made in my Pinterest board “Recipes I Have Tried.” Some have reviews and some don’t. I think I need a resolution for 2018 to make more of your cocktails.

My favourite dinners are bowls…always with a brown rice base and whatever veggies I’ve roasted that week and Instant Pot chicken (also prepped in advance).
Mine is breakfast for dinner!
Breakfast for dinner or tacos, stir fry chicken and veggies. Tuna salad with cheese and veggies in the summer.
I just adore eggs and my easiest and favorite dinner is omelettes – yummmm! that copper is just beautiful too.
Hamburgers on toasted brioche buns, topped with avocado, sautéed mushrooms and onions with homemade fries!!
My favorite recipe is Seared Pork Chops with Dijon Cream Sauce. It’s from one of the Williams Sonoma 30 Minute Meals books (love those books).

Tacos for sure! I always have tortillas on hand and fill them up with whatever is in the fridge. Best easy meal.
Your weeknight chicken taco’s recipe!! Sometimes I just serve the chicken over lettuce and add some salsa. Quick, easy and healthy!
My favourite easy dinner is – any leftover veggies, sautéed with garlic and your favourite spices and wrapped up in a large whole wheat pita with any cheese or chopped up nuts that you prefer!! It’s sooo yummmy and a great way. To use up veggies. Never the same!

Chili! Walk in the pantry, go to the spice cupboard, meat and cheese from the fridge. What could be easier!
I have homemade subs (or hoagies, or heroes, or whatever you call them) all the time. The key for me is shredded iceberg lettuce, Durkee’s spread and red wine/olive oil dressing in a squeeze bottle – and of course turkey and cheese. So good.
Turkey tacos! So good and so easy. And of course it’s not a taco without a ridiculous amount of toppings. My go to are: yogurt, guac, salsa and copious amounts of cheese

Frozen ravioli & jarred sauce, 10 minutes max to get on the table & everyone is happy.
My favorite quick dinner? Chips. Haha (I have two young kids though so it usually means eating them in a closet cloaked in darkness).
We are *all* about the beans and rice for easy dinners — we basically end up with loaded taco bowls! It’s usually a lot like your crunchy taco kale salad which is the bomb.

My favorite quick and easy dinner is Turkey Reubens. I use the thin-sliced Rosen’s rye bread, deli turkey, sauerkraut (drained) and Sargent Ultra-Thin Swiss Cheese. Toast them up in my Cuisinart toaster oven and Voila! Warm, gooey goodness. 💗

My favorite quick dinner is pasta. I can cook up some GF pasta & throw a little EVOO on top and sauté whatever is in the fridge. It’s my weekly garbage dump and so easy.
