One of my go-to easy dinners is a chipotle pumpkin soup with apples and chorizo. Comes together so quickly since it uses canned pumpkin. I love it!😋

Oven tray with roasted sweet potatoes, peppers, onions and chicken sausage!
Grilled pork chops with a microwaved sweet potato – never tire of it!
Mexican dump soup! Done in 30 minutes!
My easiest dinner is pasta. We boil pasta and then top it with olive oil, feta, fresh tomatoes, red pepper flakes, and whatever else we are in the mood for. So easy and quick and healthy!

Gotta be breakfast tacos. Fluffy scrambled eggs, a slice of feta cheese, and a huge squeeze of lime juice and hot sauce all nestled in a corn tortilla. Never goes out of style.

My favorite easy dinner recipe is a pork chop and sweet potato sheet pan meal. It’s super easy and quick prep. Basically just chop up the sweet potato and season the pork chops. Slap them on a sheet pan and put it in the oven. Sometimes I’ll throw in something green – green beans, zucchini, broccoli, anything really. In fact, it’s what I’m having for dinner tonight.
I am only making it for the second time tonight, but my husband and I agree that oven-braised beef with tomatoes and garlic served over buttered egg noodles are a wonderful addition to the rotation. Especially with the colder weather!
My easy go-to dinner is quiche! And even easier if there’s no crust (although that is the best part)!
Mac and cheese in the pressure cooker – its like The One Thing that the toddler is not saying no to at this moment and it takes the same amount of time as the boxed stuff. Not gonna fight it.
Crescent wrapped hot dogs is an easy on my son will eat.
