What To Eat This Week: 8/16/20.
Everything is so fresh and incredible right now!
And this week’s menu is so seasonal and delicious…
To kick off the week, make these summer risotto stuffed peppers! They are are so seasonally delicious. You can also prep these ahead of time as they reheat really well – and leftovers are obviously great then too!
Celebrate taco Tuesday with these summer garden black bean tostadas. So crispy and crunchy and cheese.
Grilled steak with avocado pesto and corn relish is up next! Everyone loves this meal. You can make the pesto and corn ahead of time too!
This one pot peach basil chicken is absolutely perfect for the season. Serve it with my favorite green bean salad which is extra crunchy!
Try these tortilla crusted salmon sliders – you can customize what goes on the burger, or you could eat it like a patty and skip the bun!
For a quick meal during the week, this sheet pan sausage and peppers is foolproof. So easy too.
I highly suggest making this zucchini pie for breakfasts! It’s delicious served cold and you can always reheat it quickly! And these nicoise bagelwiches are perfect for lunch.
What’s on your menu this week?!

It appears that the basil in some of your pictures has tiny flowers – my plant is doing the same thing. I assume that they’re edible? I make a similar version of this zucchini pie and the tomatoes just go with that veggie. Our cherry tomatoes are growing like crazy so I need to make this recipe – thanks.
technically the flowers aren’t great – you want to harvest the basil before the flowers start! but they are still edible. :)
I love the bubble maker, what is it called?
it’s this one! got it at the start of summer: https://www.target.com/p/volcano-bubble-machine-sun-squad-8482/-/A-77334584?clkid=d2e7c733Nb4c611e9b94242010a246c06&lnm=81938&afid=rewardStyle&ref=tgt_adv_xasd0002
I want to know about the bubble machine also. Our grandkiddos would love it. Brand? Available where? I make so many of your recipes, keep the ones we really like stored on my computer so I can print them, take them to the kitchen for preparation. One of our faves is your pumpkin ice cream with chocolate. I make it every fall, and am eager for our weather to cool down in Texas so it’ll seem seasonally appropriate.
