What To Eat This Week

Kick things off with these smoky shiitake quesadillas! These are so filling, delicious and easy. Plus you can add all the toppings you’d like.

This salmon salad with hot ginger dressing is one of my favorite salads EVER. It can’t be beat.

Smoked sausage, kale skillet gnocchi is up next. This is the easiest dish that is absolutely loaded with flavor.

This crispy kale grilled cheese with fried eggs is an oldie but goodie. Perfect if you have some leftover kale from the meal before. It’s such a fun twist on a grilled cheese. You gotta try it!

Cheeseburger tostadas are up next! These are SO wonderfully indulgent and easier than you’d expect. Everyone loves them!

Finally, baked chicken parm meatballs for the weekend are ideal. Serve them with pasta or on sandwiches. And a house salad, of course!

For lunches, I’m going with a version of my nicoise bagelwiches! And breakfasts – my shaved egg avocado toast!
