Hello hello and happy mother’s day!
This week’s menu is loaded with some amazing salad options, a flavorful salmon dish and some fajitas!!
What To Eat This Week
Kick things off with a parmesan pasta frittata! This weeknight meal is so ridiculously easy and delicious. It’s wonderful served with any sort of greens salad.
For taco Tuesday, go with these flank steak fajitas! There are multiple different ways to make them and the leftovers of these are so good.
Grilled buffalo chicken sandwiches are up next! I think these are perfect to serve with some grilled vegetables, like asparagus or broccoli. Just throw it on the grill with the chicken!
For mid-week, make this triple berry chickpea crunch salad! If you want to add meat to it, throw in some rotisserie chicken. It’s so crunchy and satisfying.
Salmon with curry peanut sauce and coconut cilantro rice is one of our other favorite dishes. It’s so flavorful and everyone loves it.
Up next, this tomato chipotle soup with pull apart bread. We adore this comforting meal and it can be enjoyed any time of year!
For lunches, I want to make a bowl of my avocado chicken salad (I add the avocado at eating time!). And for breakfasts, I’m going with a batch of salted maple granola!

Hi. I made the berry crunch salad and it was delicious!! Â My daughter is vegan so I subbed maple syrup for honey in the dressing and she added some other protein stuff for her bowl. Keep the veggie stuff coming!!
