What To Eat This Week: 8/22/21.
Our menu is full of the best summer eats this week!
If you can’t already tell, I cannot get enough of tomatoes and corn – all good things for August!
What To Eat This Week
Kick things off with my weeknight burst tomato burrata pasta. It’s so simple but SO flavorful. You can toss in a few handfuls of spinach for some greens too.
It’s taco Tuesday! Make a batch of these summer grilled corn enchiladas before the season ends. We love ’em! So seasonal and fresh.
Next, go with the bruschetta chicken! Tomatoes are just too good right now to pass up. If you like some veg on the side, I suggest my parmesan roasted broccoli of course.
Steak and potato skewers are next! This herb chimichurri is a dream. You can prep the skewers ahead of time too – along with the chimichurri!
Make some mini meatball pesto soup! It’s so light and actually very refreshing. Great way to use some pesto.
Finish things off with marinated tomato BLTs again – because those tomatoes are only good for so long. We cannot get enough of these!
For lunch, I’m making a batch of my avocado chicken salad! And breakfast – a batch of banana oatmeal muffins. Great snacks too!
