Summer Fridays, Vol 1.
It’s the return of summer fridays! If you’re new here, summer fridays is our weekly virtual coffee date where we chat about all the things we’re doing, loving, craving, watching, etc – and take a true summer friday! This is the sixth year in a row (!!!) for these fun posts and I’m so glad you wanted them to return! These are meant to inspire you for the weekend and bring some fun to each summer friday.
EATING
My grilled chicken summer rice bowls. And this blueberry summer salad – it’s incredible! Also, leftovers of my saucy baked beans. They are the best baked beans on the internet!
DRINKING
Lavender vanilla ice coffee!! ‘Tis the season! Also, this cucumber mint margarita is insanely refreshing.
BAKING
My banana cake with espresso cream cheese frosting. AHHH. Major fave.
MAKING
My chilled queso dip for the weekend. You won’t believe how delicious this is.
CRAVING
My lavender vanilla latte ice cream. Yessss.
GRILLING
My blackened chicken watermelon salad. The dressing is practically drinkable.
LISTENING

READING
This week I finished the True Love Experiment and LOVED it. I just started The Boyfriend Candidate last night. If you haven’t checked out my summer reading list yet, you can find it here!
SHOPPING
A few weeks ago I shared all of my summer essentials in this post. A few things that I can’t live without right now: the solar buddies sunscreen applicator, our waterproof blanket (permanently in the car!), my favorite visor and these reusable water balloons (literally hours of fun!). Also, these teleties. I don’t even use regular hair ties anymore.
WEEKENDING
We are in the thick of the end of school (still a few days left), major baseball season and t-ball season (we have seven games in five days!) and it’s gorgeous and hot outside. Also – strawberry picking! It’s time!
BUYING
I was so excited yesterday to see the kyte baby neon summer collection!! My kids love bright colors (I wonder why?!) and I got some of the solids that are such gorgeous shades. Plus, we love the kyte material too.
WEARING
I’ve been living in these birkenstock slides outside this season – I have the purple ones. They are so comfortable! Also, these lulu-like tanks are some of my favorites. I have them in so many fun colors and they are a fraction of the price.
CELEBRATING
It’s national donut day! My favorites here? These salted chocolate fudge donuts and strawberry buttermilk donuts.
PLANNING
The end of school with our summer break essentials calendar! Oh my word, I LOVE THIS. It is so helpful to have everything on one big sheet and just… see it all in one place.
LOVING
I can’t even handle how much I love these mystique sandals that elin hilderbrand has collabed with. She has talked about them for years but I have never bought a pair, mostly since I can only wear them for a few months out of the year here. But I am so tempted – they are so gorgeous. I also thought about getting my mom a pair for her birthday. Have you ever tried them? They don’t look supportive at all, so I’m hesitant to spend that much on something uncomfortable!
SHARING
If you haven’t tried this frozen aperol spritz that I shared a few weeks ago – oh my gosh – you must! It’s going to be my signature summer drink. And if it’s hitting the 90s where you are (like it is here!), it’s the perfect refreshing treat.

I love it! Our spring is still quite mixed in terms of giving us summer weather (Dutchie from The Hague here), but I’m joining you in cucumber mint margarita’s as soon as I finish work & yoga today! Planning on making summer courgette & ricotta dish from Ottololenghi’s OTK, and wrapping things up with a rhubarb tart.
Wow can’t believe this is the 6th year of this series, I love it, and one I look forward to. I am loving all the fresh fruit right now. The blueberries I bought were some of the best, plus I am with you no candy can compete with an in season strawberry, and that’s coming from a person with a serious sweet tooth :-)

I LOVE Summer Fridays! Also, I bought 2 of the summer break calendars for my kids and I feel so organized. I appreciate how they start on Monday intentionally.
