It’s a new year! Boy am I so glad to see 2021.
This week’s menu is top notch. Nourishing, delicious, simple!
What To Eat This Week:
Kick things off on Monday with this kung pao cauliflower. I love serving it with jasmine rice. You can make extra sauce if you really love it too!
Tomato soup with grilled cheese sticks can’t be beat. It’s the ultimate comfort food. This tomato soup is DIVINE. You can make the grilled cheese with your favorite cheese too!
Cheesy chicken baked avocados are next on the list. We LOVE these. They are so warm and wonderful.
I’m going with my fall kale honeycrisp salad one more time this year! I just can’t let it go.
Next, this cashew shrimp and mango stir fry is easy and so good. It’s filling and leftovers for lunch are amazing too.
Sausage kale skillet gnocchi comes together SO fast. And everyone loves it! I like to use smoked turkey sausage, but feel free to use your favorite precooked sausage here too.
For lunches, I want to make some of my favorite egg salad. I may make a batch of this cauliflower farro salad too. And breakfast will be these layered immunity boosting smoothies or my pistachio coconut oatmeal!
